  • You can use a steamer pot with a diameter of 24cm to make grapefruit dessert. Some products have a 5-layer base design that transmits and retains heat well, ensuring even cooking without burning.

    Wash the mung beans clean, discard any damaged or unripe beans, then soak them in cold water for about 4 hours.

    Next, pour enough water to cover the mung beans and place them in the microwave, set to 800W power, and cook for about 10 minutes.

    For the grapefruit peel, use a knife to remove the green skin, then cut the grapefruit flesh into small, bite-sized pieces.

  • Boiled Pomelo Pulp

    Place the cut pomelo pulp into a bowl, then add 1 cup of water (rice bowl) and 2 tablespoons of salt. Next, use your hands to squeeze the pomelo pulp vigorously to remove the bitterness, then rinse several times with cold water to remove the salt.

    Then, bring a pot of water to a boil. When the water is boiling, add the pomelo pulp and blanch for about 3 – 5 minutes, then remove the pulp and place it in a bowl of cold water to soak for 3 minutes. After soaking, take the pomelo pulp out and squeeze out the excess water.

    Transfer the pomelo pulp to a bowl, add 1/2 cup of water (rice bowl) and 3 tablespoons of sugar (about 45g), mix well by hand to let the pomelo pulp absorb the seasoning, then let it sit for 2 – 3 hours.

  • Stir-fried Pomelo Pulp

    After 2 – 3 hours, heat a pan on the stove, add the pomelo pulp to the pan and stir-fry on low heat for 20 minutes. After stir-frying, add 100g of tapioca starch, stirring well so that the starch coats the pomelo pulp evenly.

    Next, boil another pot of water, add the mixture of pomelo pulp and tapioca starch that you just stir-fried into the pot, and cook until the pulp becomes translucent, then remove it and place it in a bowl of ice water to make the pomelo pulp crispy.

  • Cooking grapefruit dessert

    Boil about 2 liters of water, after the water boils, add pandan leaves and cook for about 2 – 3 minutes to extract the fragrance. After 2 – 3 minutes, remove the pandan leaves, add 1/2 cup of sugar (about 100g) into the pot.

    Next, evenly mix 20g of tapioca flour with a little filtered water. Then, add the mixed tapioca flour into the pot while stirring well.

    Finally, add the cooked mung beans and the stir-fried grapefruit pulp into the pot and continue to stir well, boil for another 1 – 2 minutes, adjust the sweetness to your liking, then turn off the heat.

    After purchasing the grapefruit, separate the peel. Then, use a knife to peel off the green part of the grapefruit peel and cut the white flesh.

    Next, cut the white flesh of the grapefruit into small cube shapes and wash it thoroughly with water. Place the grapefruit flesh in a bowl of diluted saltwater, soak for about 5 minutes, and then squeeze out the water several times.

    Finally, place 100g of peeled mung beans in a bowl of water and soak for about 1 hour.

  • Boil and mix grapefruit pulp

    Put a pot of water on the stove and bring it to a boil. When the water boils, squeeze 1/2 a lemon into it, stir well, then add the grapefruit pulp into the pot and boil until the pulp becomes translucent.

    After boiling, take the grapefruit pulp out and rinse it with cold water about 8 times, washing and squeezing it clean.

  • Steam mung beans

    Put 100gr of soaked mung beans into a steaming pot and steam the beans for about 15 minutes over medium heat. Steam until the beans remain whole, cooked soft but not mushy.

  • Mix grapefruit peel with tapioca flour

    After the grapefruit peel absorbs the sugar, add 75g of tapioca flour to the grapefruit peel and mix well. Once the first layer of tapioca flour coats the grapefruit peel evenly, add another 75g of tapioca flour to the grapefruit peel and mix until the tapioca flour sticks tightly to the grapefruit peel.

  • Cook the pudding

    Place a pot of water on the stove and bring it to a boil. Once the water is boiling, add the tapioca-coated grapefruit peel and cook until the tapioca flour is cooked through, then remove it to a bowl of ice water and soak for 5 minutes. After 5 minutes, remove the grapefruit peel and let it drain.

    Next, add 1 liter of water and 300g of palm sugar to the pot and bring to a boil. Once the palm sugar water is boiling, add the grapefruit peel and stir well.

    Then, add the steamed mung beans to the pot and cook until the water starts to bubble. When the water is bubbling as desired, add the mixture of 40g of tapioca flour mixed with 1/2 cup of water (rice bowl) to the pot and continue to cook until the pudding thickens, then turn off the heat and let it cool.

    To make the coconut milk to eat with the pudding, add 500ml of coconut milk and 80g of granulated sugar to the pot and simmer on low heat. Next, add the mixture of 50g of tapioca flour and 1/2 cup of water to the pot, stir well, and cook until the coconut milk thickens.
