How to choose good clams
- When buying clams, you should observe whether the clam’s shell is open or closed. If the shell is open, gently tap it, and if it closes immediately, it means the clam is still alive.
- Choose clams with unbroken shells; if the shell is broken, those are dead clams.
- You can smell the clams to check if they have a foul odor; if they do, the clams are dead and should not be purchased.
- Buy clams from reputable stores or supermarkets to ensure the quality of the clams.
How to make Mussel Porridge

Prepare the ingredients
First, soak 200g of mussels in diluted salt water for 10 minutes, then rinse clean. Next, use a pot to briefly boil the mussels with 3 crushed stalks of lemongrass for 5 minutes, then remove and separate the mussel meat.
Then, wash the green onions, Vietnamese coriander, and cilantro, then chop the Vietnamese coriander and mince the garlic. Next, peel and wash 1 piece of ginger, then cut half of the ginger into strips and mince the other half.

Sauté the mussels
Add 2 tablespoons of cooking oil to a heated pan, then add minced garlic and ginger to sauté until fragrant, then add the mussels and stir-fry for 5 minutes over medium heat.
After that, add 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder, and 1 teaspoon of sugar for seasoning, then stir-fry for another 3 minutes.
Tip: You shouldn’t stir-fry too long because the mussels will release water and not taste good.

Roast the rice
First, rinse the rice and mung beans until clean and let them drain.
Add 1 tablespoon of cooking oil to a heated pan, then add 30g of raw rice and roast until the rice grains are slightly yellow.
Tip: To make the rice and mung beans softer, you can soak them in warm water for about 2 hours.

Cooking porridge
Boil 100ml of water in a pot, add the roasted rice along with green beans and cook for 20 minutes or until the green beans and rice grains are soft. Then, add the clams to the pot, season with 1/4 teaspoon of salt, 1/4 teaspoon of seasoning powder, and cook for another 10 minutes, adjusting the seasoning to taste before turning off the heat.
Serve the porridge in a bowl, adding some chopped green onions, shredded Vietnamese coriander, cilantro, and 1/2 a piece of ginger cut into thin strips.
Tip: While cooking the porridge, you can add more water if you prefer a thinner consistency.
