How to choose good green beans
- Quality green beans are those that have a moderate and uniform size, not too large, with a distinct natural aroma. When squeezed, you will feel the beans are firm and not easily crushed.
- You should buy from reputable sources. When purchasing, pay attention to details such as origin and expiration date printed on the packaging.
- Avoid choosing beans with unusual colors, signs of mold or pests, or those that have an unusual smell when sniffed.
How to make Mung Bean Dessert with Coconut Milk

Boil the mung beans
You wash the mung beans thoroughly. If using peeled mung beans, soak them in water for about 1 hour; if using whole mung beans, soak them overnight. Then drain the water. In case you need to hurry, you can soak the mung beans in hot water for about 15-20 minutes.
Next, you pour the mung beans into a pot, then add 500ml of water, place it on the stove and turn on medium heat until it boils, then add 80g of sugar and stir well.
You continue to boil for another 5 minutes until the dessert boils again, then add 1/3 teaspoon of salt to make the dessert sweet but flavorful. Stir well and continue to boil for another 5 minutes.

Prepare the coconut milk
You shake the coconut milk can well, then take out 200ml of coconut milk and mix it with 18g of sugar and 1/4 teaspoon of salt. Then, you place the mixture on the stove and simmer it with 2 cleaned pandan leaves, stirring continuously to dissolve the sugar and salt.
When the mixture starts to simmer, you turn off the heat and cover it to steep for about 10 minutes. This steeping helps the coconut milk take on the fragrance of the pandan leaves.
Next, you dissolve 2.5g of cornstarch in a bowl with 5ml of water. Then, you turn on the stove to bring the coconut milk back to a boil, remove the pandan leaves, and pour the cornstarch mixture into the pot, stirring until it boils again.

Cook the dessert
First, mix 30g of arrowroot flour with a little water until dissolved.
Next, place the dessert pot back on the stove, turn on medium heat. When the dessert mixture boils, gradually add the arrowroot flour mixture while stirring quickly to prevent the flour from settling at the bottom of the pot.
When the dessert mixture becomes clear, taste and adjust the seasoning to your liking, then stir well and cook until it boils again before turning off the heat.
The dessert mixture will still be liquid when it first boils but will thicken enough as it cools down. Use a spoon to stir it well again so that the mung beans float in the dessert.
The final step is to scoop the dessert into a glass, pour additional coconut milk on top, and enjoy. You can also add some dried coconut or freshly grated coconut on top for a more attractive dessert.
