How to choose fresh oyster mushrooms and shiitake mushrooms

Oyster mushrooms:

  • You should choose firm oyster mushrooms that feel solid in your hand, with the cap intact and tightly attached to the stem.
  • Prioritize choosing mushrooms that have many small offshoots at the base, are fresh, and have a distinctive fragrant smell.
  • Avoid mushrooms that are soft, darkened, or have a foul odor when sniffed.

  • Prepare the ingredients

    Dried anchovies, after purchasing, you need to carefully clean the insides of each fish before using them to cook the broth.

    For napa cabbage and bok choy, remove any damaged or spoiled outer leaves, cut them into quarters, separate the leaves, wash them thoroughly, and put them in a basket to drain. Wash the chrysanthemum greens, removing any wilted or damaged stems, and let them drain.

    Wash the green onion thoroughly and slice it thinly. Wash the green/red chili pepper and slice it diagonally.

    For oyster mushrooms, cut off the stems, gently separate each mushroom, and for shiitake mushrooms, trim the hard stems; both should be washed with salt water and then rinsed again. Leave the oyster mushrooms whole and slice the shiitake mushrooms.

    Cut the tofu into pieces about the thickness of one finger.

  • Cooking the hot pot broth

    Place a pot on the stove, adjust the heat to medium, add 20 dried anchovies, stir briefly for about 2 minutes, then add 1.2 liters of filtered water, 15 grams of dried kelp, and 30 grams of dried shrimp.

    Wait for the broth to boil, then remove the dried kelp, cover the pot, and wait for another 10 minutes before turning off the heat.

    Use a sieve to remove the dried anchovies and dried shrimp.

    Tip: For convenience and to save time, you can use various types of bone broth (pork, beef, or chicken) to cook the hot pot broth.

  • Making hot pot sauce

    To make the hot pot sauce, add to a bowl 2 tablespoons of Korean chili powder, 1 tablespoon of fish sauce, 2 tablespoons of soy sauce, 2 tablespoons of mirin, 1 tablespoon of minced garlic, and 1 tablespoon of satay, and stir well to combine the ingredients.

  • Arrange ingredients in the hot pot and finish

    First, place a clay pot on a mini gas stove, add all the napa cabbage at the bottom, drizzle 2 tablespoons of hot pot sauce over the surface, then layer the ingredients including dumplings, vegetables, mushrooms, chili, and soft tofu on top.

    Next, pour the broth over the ingredients to cover them and add all the remaining sauce.

    Turn on the stove and heat the hot pot; once the hot pot boils and all the ingredients are cooked, you can start enjoying it.
