Chicken intestines 300 gr (1 set) Young chicken eggs 600 gr Fresh lotus seeds 100 gr Garlic 5 cloves Shallots 6 bulbs Onions 2 bulbs Chili peppers 2 pieces Green onions 2 stalks Enoki mushrooms 150 gr Shiitake mushrooms 5 pieces Coriander 3 stalks Hotpot vegetables a little (water spinach/ mustard greens) Fish sauce 3 tablespoons Cooking oil 3 tablespoons Salt 1 tablespoon Vinegar a little Common spices a little (salt/ sugar/ monosodium glutamate/ seasoning powder/ ground pepper)

How to prepare Chicken Intestine Hot Pot

  • Prepping chicken intestines and quail eggs

    After buying the chicken intestines, thoroughly massage them with 1 tablespoon of coarse salt, then rinse them under running water, drain, and cut into bite-sized pieces.

    Wash the quail eggs under running water to easily remove all the slime, then remove the odor by rinsing with a little diluted vinegar, take them out, and rinse again with clean water.

    Peel and crush the shallots and garlic, then finely chop them. Trim the roots of the green onions and cilantro, discard any wilted leaves, wash them clean, and cut them into bite-sized pieces.

    Peel the onion, wash it, and then cut it into wedges. Remove the stems from the chili peppers and cut them into pieces.

    Rinse the lotus seeds briefly with water and place them in a bowl.

    Remove the stems from the shiitake mushrooms and enoki mushrooms, and clean the water spinach and mustard greens, then soak them in saltwater, rinse them clean, and drain.

    Form the pork paste into small balls.

  • Cook the hotpot broth

    Put a pot on the stove, heat 3 tablespoons of cooking oil until hot and sauté the chopped onion and garlic until fragrant. Then add 2 liters of bone broth (or plain water) and 100g of fresh lotus seeds, simmer for 30 minutes.

    Next, add to the broth, 1 tablespoon of seasoning powder, 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of pepper, and 3 tablespoons of fish sauce.

    At this point, add the prepared onion, chili, and green onion and simmer over medium heat for another 10 minutes.

    Tip: You can simmer the bone broth from chicken bones or pork bones, if using plain water to cook, adjust the seasoning to your taste!

    After finishing the broth, add the sausage, then add the chicken offal and egg yolks, and cook for 10 minutes.

    Next, add shiitake mushrooms, enoki mushrooms, along with water spinach and mustard greens to the hotpot, cook until done, and add one more pack of instant noodles, and it will be ready to serve immediately.
