- When choosing pork stomach, observe and select those with white or light yellow color, not bruised or blood-stained, and without any foul smell.
- Touch it to feel the firmness, choose stomachs that are thick-walled, have a lot of mucus but are not slimy to the touch.
How to choose fresh green pepper
- When selecting green pepper, look for bunches that are bright green and shiny. The peppercorns should stick tightly to the bunch.
- Hold the bunch of pepper and choose those that are heavy and firm, not soft.
How to prepare Green Pepper Stewed Pig’s Stomach Hot Pot

Prepare ingredients
To clean the pig’s stomach and eliminate the fishy smell, rub salt all over the stomach, scrape off the mucus, and rinse the stomach several times with water until clean.
Other ingredients such as carrots, white radishes, and onions should be cut into bite-sized pieces. The cilantro and green onions should be cut into sections.
Wash the green pepper thoroughly and pound 1 bunch until crushed. Slice half a piece of ginger, and pound the remaining part. Mince the red onions.
Tips for cleaning the stomach without a fishy smell:- You can use coarse salt or regular salt to rub both inside and outside of the stomach and then rinse it clean with water.
- You can also use lemon juice to wash the stomach.
- Alternatively, you can blanch the stomach in water mixed with salt and ginger to eliminate its smell.

Blanch the stomach
Place about 1/3 pot of water on the stove, add 1 sliced piece of ginger and 2 tablespoons of white wine, then put the stomach in to blanch on high heat. Once the water is boiling, reduce to medium heat and blanch for 5 minutes.
Next, remove the stomach, rinse with water until cool, and cut into small bite-sized pieces.

Marinate the intestines
Put the intestines in a bowl to marinate, add crushed green pepper and minced ginger, 1 tablespoon of fish sauce, 1 tablespoon of oyster sauce, and 1/2 tablespoon of salt, then mix well and marinate for 5 minutes for the intestines to absorb the seasoning.

Cook the hotpot
Place a pot on the stove, add 2 tablespoons of cooking oil and heat it up, when the oil is hot, add minced shallots to sauté until fragrant, then add the marinated tripe and stir-fry for about 5 minutes over medium heat.
Next, add 1.5 liters of filtered water and bring it to a boil, once boiling, add carrots, white radish, green pepper, onion, and season with 3 tablespoons of seasoning powder, 1.5 tablespoons of monosodium glutamate, and 4 tablespoons of sugar, then cook for an additional 10 minutes over medium heat until it boils again. You can adjust the seasoning to your taste, then add chopped green onions and celery before turning off the heat.
