How to choose good tofu, without gypsum

  • To select good tofu, you should pay attention to the color; the yellower the tofu, the more likely it contains gypsum, which you should avoid buying.
  • Additionally, when choosing tofu, you should hold the piece to feel it. If the tofu is soft and feels light, it’s pure tofu; if it feels heavy, is a bit hard, or is cut too perfectly square, you should also avoid buying it.
  • When selecting tofu, you should smell it to see if there is a hint of lime. Quality tofu has a mild, distinctive aroma, and when cooked, it has the creamy taste of soybeans, similar to cream. In contrast, tofu mixed with gypsum will have a strong lime smell, and it tastes slightly bitter.

How to choose delicious dried shiitake mushrooms

  • If you choose to buy dried shiitake mushrooms, you should pay attention to selecting mushrooms that are intact, not broken, with a light brown (or not too dark) cap. If possible, you should smell to see if the mushrooms have a musty odor or if any white mold appears.
  • If choosing fresh shiitake mushrooms, you should select those that are umbrella-shaped, with no signs of bruising or breakage, of moderate size, with short stems and especially tightly closed caps, and a yellow-brown color.

  • Prepare the ingredients

    Wash the mushrooms, drain them; if you bought dried mushrooms, you can soak them in water for 10 – 15 minutes to soften, then slice them.

    Peeled shrimp should be deveined and rinsed with water. Clean and drain the squid after removing the insides.

    Dried shrimp should be rinsed in water, then soaked in warm water for about 10 minutes to soften. Rinse the tofu and cut it into bite-sized pieces.

    Wash the green onions and chop them finely.

  • Cooking the noodle broth

    Place a pot on the stove, add 1 tablespoon of cooking oil and wait about 5 minutes for the oil to heat up, then add the chopped green onions and stir continuously until fragrant.

    Next, add the meat and stir-fry for about 5 minutes, then add the kimchi and dried shrimp along with the soaking water from the dried shrimp. When the water starts to bubble, add the tofu.

    Season the pot with 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, 1 tablespoon of chili sauce, add the sliced shiitake mushrooms and cook until the water boils, then add shrimp and squid.

  • Cook Kimchi Noodles

    Adjust the broth to your taste, then add the noodle block, crack an egg in, and wait for the water to boil for about 5 minutes until the egg is cooked and the noodles are soft, then turn off the heat.

    Sprinkle some green onions on top, add a bit of ground black pepper, and start enjoying.
