How to choose fresh and delicious shrimp
- You should choose live shrimp with a transparent outer shell and a distinct sea smell, not a fishy smell.
- The head of the shrimp is tightly attached to the body, the tail of the shrimp is folded together, and the shrimp is straight or only slightly curved, which means the shrimp is still fresh.
- You should not choose shrimp with black spots under the shell, shrimp that are round and curved, and tails that are spread out because these shrimp have been injected with water, are of poor quality, and will not taste sweet when eaten.

How to Prepare Sun-Dried Shrimp

Preparation and Cooking Shrimp
After buying the shrimp, rinse them briefly with diluted saltwater, then rinse several times with clean water.
Put the shrimp in a pot, add 1/2 tablespoon of vinegar, and cover the pot, cooking for about 5 minutes. Then, open the lid and stir well until the shrimp are fully cooked!
Tip: Boiling shrimp with vinegar will help the shells come off more easily and also make the shrimp look more appealing.Once the shrimp are cooked, transfer them to a colander and rinse thoroughly with cold water, then let them drain.

Stir-Frying Shrimp
Heat the pan, add the shrimp, then add 1 tablespoon of salt and 4 tablespoons of vodka, stir the shrimp well, and fry for about 10 – 15 minutes until the shrimp are completely dry and the shells are slightly puffed up, then turn off the heat!
Tip: Stir-frying the shrimp helps them dry faster and makes the shrimp meat tastier!

Drying shrimp and completing
You place the shrimp on a tray or a plate, spread them out evenly and dry them in the sun for about 2 – 3 hours, then flip the other side to dry the shrimp evenly. The drying time is about 6 – 7 hours is fine!
After that, you peel the shrimp!
Tip for you: To peel the shrimp quickly, put the dried shrimp in a plastic bag and use a pestle to crush them, the shells will come off easily!

Tips for preserving sun-dried shrimp
- If you do not use all the sun-dried shrimp, you can preserve it by putting it in an airtight container and placing it in the refrigerator in the cool compartment for about 5 – 7 days, and in the freezer for about 1 month.
