How to choose fresh ingredients

How to choose fresh beef

  • You should choose pieces of beef that are bright red with creamy white marbling, the fat should be bright yellow, the meat fibers should be tender, and the surface should not be too smooth.
  • A good piece of beef will have a good bounce when pressed with your hand, should not feel sticky, and should not have any unpleasant or abnormal odors.
  • Avoid buying pieces of beef that are pale green or dark red, with dark yellow fat, and that have white spots on the meat surface, as these indicate that the meat has been stored for too long and is not of good quality.

How to choose fresh shrimp

  • You should choose shrimp that have a transparent shell with a uniform color, still slightly smelling of seawater, and not fishy.
  • Fresh shrimp usually have the head and body tightly attached, the body is slightly curved, firm, and the tail is folded together.
  • Avoid buying shrimp that are slimy, with tails spread out, legs that are black and no longer firmly attached to the body, as these are not fresh or may have been soaked in chemicals. Eating them will lose flavor and not ensure health.

  • About the body: Choose octopuses with a firm body; when you press it, it should not be soft and watery.

How to choose fresh and delicious chicken leg mushrooms

  • You should choose mushrooms with bright colors, measuring 12 – 15cm in length, and have a characteristic aroma like almonds.
  • Fresh chicken leg mushrooms will have a round cap with a brown color, no bruises or wrinkles, and will have a thin layer of fuzz on top of the cap, with a white stem that feels firm and has uniform color.
  • Avoid buying mushrooms that are too long because the inside will be hollow and flavorless. Do not buy mushrooms that show signs of being crushed or have an unpleasant odor, as they will not taste good when eaten.

Where to buy Korean God sauce?

  • You can find Korean God sauce at Korean spice shops, grocery stores, or large supermarkets. Additionally, for more convenience, you can order directly from e-commerce websites to have it delivered to your home.

Should you buy pre-made kimchi?

  • Buying pre-made kimchi will help you save time on preparation and waiting, and it also helps you save costs on purchasing ingredients while meeting the immediate need to use kimchi. Moreover, buying pre-made kimchi is a suitable and convenient option if you rarely cook.
  • However, alongside the advantages, purchasing pre-made kimchi may not ensure food safety if you choose to buy from unreliable and low-quality sources.
  • Some types of pre-made kimchi contain preservatives, which may not be good for your health. Additionally, the flavors of pre-made kimchi might not match your taste due to being too sour, too sweet, or too salty.
  • You can also make kimchi at home to ensure quality safety following the guidance from TasteVN.

How to prepare Korean seafood kimchi hotpot

  • Prepare the ingredients

You cut 2 chili peppers and put them into a bowl of water, then add the clams to soak and clean the sand inside. For enoki mushrooms and chicken mushrooms, cut off the stems and soak them in diluted saltwater for about 20 minutes. After that, rinse them with water a few times and place them in a basket to drain.

After buying the octopus, rinse it briefly with water. Then, place the octopus in a large bowl with 1 teaspoon of diluted salt and massage it to remove any dirt from the tentacles.

Turn the octopus over and gently squeeze the round hole to remove the beak. Next, use scissors to remove the eyes and intestines of the octopus. Rinse it again with water a few times.

For the shrimp, use a toothpick to pierce through the shrimp’s body to remove the black vein, then rinse it with water and let it drain.

    Tip:

    • To prevent the octopus from turning black, avoid breaking the eyes while cutting.

How to prepare octopus without a fishy smell

    • To eliminate the fishy smell of the octopus, cut off the eyes, ink sac, and the internal organs, then rinse several times with clean water.
    • Rub the octopus with a mixture of salt, ginger, or vinegar, then rinse with water a few times.

For the beef, to remove the unpleasant smell, soak the meat in diluted saltwater for about 5 minutes and rinse thoroughly with water, then slice thinly against the grain into bite-sized pieces and place them in a bowl.

How to clean beef without a smell
    • Method 1: To prevent the beef from losing its nutrients, you can use a clean damp cloth to wipe the piece of beef once before cooking.
    • Method 2: Soak the piece of beef in white wine for about 15 minutes, then rinse thoroughly with water.
    • Method 3: Alternatively, you can roast a piece of ginger until cooked, then pound it finely and rub it onto the piece of beef, then rinse with water.

Crushed shallots, then finely chopped. Ginger is sliced thinly and the onion is diced.
