How to make Green Bean Che with Tàu Xá

Cut the orange peel
After separating the orange peel from the fruit, wash it thoroughly, then slice it into small strips that are just right for eating.

Soak green beans
Put all 50g of green beans into clean water and soak for about 4 hours so that the beans expand evenly and maximize their nutritional value.

Cook green beans
Place a pot on the stove, add the soaked green beans along with the prepared coconut water, and cook the beans for about 15 minutes over medium heat until they are cooked through.
Tip: Don’t forget to stir the beans constantly during the cooking process to prevent them from burning and sticking to the bottom of the pot! -
Cook the dessert
When the green beans have expanded evenly and are soft, we add the peeled lotus seeds into the pot and cook for another 10 minutes until the lotus seeds are cooked, at this point the fragrant smell will be rising.
After seeing that the lotus seeds are cooked, we sequentially add the orange peel, rock sugar, and a little salt and cook for another 3 minutes before turning off the heat.

Che is the name in Cantonese (China) because this dish has been introduced to Vietnam by the Chinese expatriates and Minh Huong people for centuries. Its full original name is “green bean che” (lục đậu sa), meaning mashed green beans.
