You can buy whole pieces of pork and ask the seller to grind it for you or bring it home to grind using a meat grinder to ensure safety and deliciousness.
- You should observe the overall appearance, and choose pork that has a balanced ratio of lean meat and fat, not too much fat, and not too much lean meat so that when ground and cooked, it won’t be dry.
- Firstly, you must choose fresh meat. The color of good meat is bright pink, not too red and not too pale. If the pork is pale, greenish, and has a foul smell, then the meat has gone bad; you should not choose this type of meat.
- Pork that is firm and has high elasticity is good meat. You can test it by pressing your finger into the meat; if it bounces back immediately, is not slimy, and does not leak water or juice, then it is good.
How to choose good pork skin
- You should choose pork skin from the area under the loin or lean shoulder, as these parts are usually tougher and of better quality.
- Good pieces of skin are thick, flat, large-sized, and easy to prepare.
- You should choose pieces of skin that are pink, have elasticity, and do not have a foul smell, as these indicate good pork skin.
- You should limit choosing belly skin as this part is usually thin, making it easy to fall apart when cooked and not crispy and delicious.
How to choose fresh carrots
- You should choose carrots that have a firm, shiny skin and do not have unusual black spots.
- Preferably, select those with green tops that are still attached tightly to the body.
- Especially, you should choose carrots that are proportionate overall; do not choose those that are large at the top and small at the bottom or vice versa, as these grow unevenly and are not tasty.
How to prepare Minced Meat Noodles

Prepare the ingredients
Peel the onion, wash it clean, and cut it into wedges. Trim the green onion by removing the yellowed leaves and roots, then wash and chop finely.
Peel the garlic, wash it well with water, and then crush it.
Remove the tough outer skin of the celery, wash it clean, and then cut it into pieces about the length of one finger.
Peel the carrot, wash it clean, and cut it into bite-sized pieces.
For the dried shrimp, wash it thoroughly under water, then put it in a microwave to dry or stir-fry in a pan for 1 minute.
To remove the smell from the pork skin, boil it with vinegar and salt for about 5 minutes, then remove and let it drain.
Heat a pan on the stove, add 4 tablespoons of cooking oil. Once the oil is hot, add all the garlic and stir until it turns golden brown and fragrant, then turn off the heat. Transfer the fried garlic to a bowl.

Boil the pasta
Put a pot on the stove, add 500ml of water and bring to a boil. Once the water is boiling, add 1 tablespoon of cooking oil, then pour in all the pasta and adjust the heat to high to boil the pasta.
After 5 minutes, reduce the heat to medium. Cook for about another 7 minutes until the pasta is evenly swollen and soft, then scoop it out into a colander and let it drain.

Marinate the ground meat
To marinate the meat, add 1/2 teaspoon of salt, 2 teaspoons of dried chili, 2/3 of chopped green onions, 1/2 teaspoon of pepper, and 1/2 tablespoon of fish sauce. Then, use your hands to mix well so that the meat absorbs the spices.

Prepare the broth
Place a pot on the stove, add 2 liters of water and bring to a boil. Once the water is hot, add 2 tablespoons of dried shrimp and all the chopped carrots, and gradually add the minced meat by the spoonful.
After about 5 minutes, add all the celery and the boiled pork skin, season with 1 tablespoon of salt and cook for about 10 minutes.
After 10 minutes, add the onion, season with another tablespoon of salt, 1 tablespoon of fish sauce, and cook for an additional 10 minutes. Finally, taste and adjust the seasoning to your family’s preference and turn off the heat.
Tip: During cooking, frequently skim off the foam to keep our broth clear. -
Completion
Place the noodles into a bowl. Blanch the noodles briefly with the broth. Then spoon the broth, vegetables, minced meat, and pork skin on top, and you have completed the minced meat noodle dish with vegetables.
Sprinkle some chopped green onions, fried garlic, and chili powder to enhance the flavor and richness of the dish.
