- Choose mushrooms that are of moderate size, with short stems, a tightly closed cap, and a slightly yellowish-brown color.
- Avoid selecting mushrooms with dark brown caps as they may be poisonous.

- To choose good napa cabbage, you should select those with an oval shape, elongated and gradually lighter green from the tip of the leaves to the stem.
- Additionally, you can determine the firmness of the napa cabbage by picking it up; if it feels a bit heavy and firm in hand, then it is good napa cabbage. Good napa cabbage has a size that is not too large and a moderate weight, neither too heavy nor too light.

Prepare shiitake mushrooms
Fresh shiitake mushrooms bought should have the dirty part at the base cut off, remove the mushroom stems, and soak them in diluted salt water for 2 minutes. After that, wash them thoroughly with water, using your hands to gently scrub the mushrooms to remove all dirt and impurities.

How to prepare shiitake mushrooms:- Method 1 (boil mushrooms): Use a knife to cut off the dirty base (if any), then boil the mushrooms in a pot of boiling water for about 3 minutes, then remove and let drain.
- Method 2 (soak mushrooms): You can soak the shiitake mushrooms in warm water for about 1 – 2 minutes to clean off all the dirt and sawdust. Then rinse with cold water and cut off the stems of the mushrooms to help clean off the impurities. You can also wash shiitake mushrooms with rice washing water to eliminate the strong smell of the mushrooms and help retain their natural flavor.

Boil pasta
Place a pot on the stove, add 1 liter of water, and bring it to a boil. Next, add the pasta and boil it with 1/2 teaspoon of salt for about 8 – 10 minutes until the pasta is cooked.
To make the pasta crispier and tastier, after boiling, remove the pasta, rinse it with cold water, and let it drain.
Tip:
- You should boil the pasta over medium heat; do not boil it too long, or the pasta will become mushy and lose its taste.
- When boiling pasta, you should add a little cooking oil to make the pasta glossy and mix a bit of oil after boiling to prevent it from sticking.

Grilled beef brisket
After purchasing, let the beef brisket thaw (frozen meat) or rinse it briefly (fresh meat).
Heat a pan on high heat, then add 1 tablespoon of cooking oil, wait for the oil to heat up, and add the beef brisket, stirring for about 2 minutes until the beef is seared.
Next, add 1/2 teaspoon of sugar, 1 tablespoon of white wine, and proceed to ignite the wine directly on the stove.
Tip: Grilling will help the beef retain its juices, become firmer, tender, absorb spices, and taste better.

Cook the pasta
Place a pot on the stove, add 1 tablespoon of cooking oil, and wait for the oil to heat up, then add 1/2 tablespoon of minced garlic and 1/2 tablespoon of minced shallots to sauté until fragrant.
Next, add 1.5 liters of water to the pot, 1 pack of kimchi hot pot seasoning, carrots, napa cabbage stalks, broccoli stalks, and the boiled pasta, and cook until boiling for about 7 – 10 minutes.
Then add all the shiitake mushrooms, broccoli, and napa cabbage leaves, and cook for an additional 4 minutes until the vegetables are cooked. Finally, add the beef, season to taste, and turn off the heat!
