- Fresh ribs will have pink meat, elasticity, and no spoiled smell.
- You should choose flat ribs with small bones.
- Choose ribs that have meat and fat so that when cooked, the ribs will be tender and not chewy.
How to choose good fresh shrimp
- You should choose shrimp that have intact and plump heads and bodies, and feel firm when touched.
- Shrimp have a natural fishy smell. The color is uniform with no strange odors.
- Check the width between the joints of the shrimp. If the joints are narrow, the shrimp is fresh and tasty. If the joints are wide, it indicates that the shrimp is not fresh due to being stored too long or kept in the freezer for an extended period.
- You should also avoid buying shrimp that are slimy, as they may be sick or have been stored for a long time.
How to choose good fresh quail eggs
- For fresh quail eggs, you should choose those with slightly rough shells, and a white powdery coating on the outside. Do not choose smooth eggs with black spots or mold due to moisture.
- You can hold both ends of the egg and shake it gently near your ear; if it is a fresh quail egg, it will be very dense and you will not hear any sound when shaking.
- Do not buy eggs that make noise when shaken lightly due to having air space inside and being loose.
How to prepare Quang noodles with pork ribs

Prepare the ribs
After buying the pork ribs, cut them into pieces about 5 cm long, rinse briefly with water, then rub with salt for about 3 minutes and rinse again with water, then let them drain.
Put 1 liter of water into a pot, place the pot on the stove, and turn on the heat to boil the water. When the water boils, add 1 teaspoon of salt, then slowly add the ribs and blanch for about 5 minutes, then remove the ribs to drain.
Tip:
- You should wash the ribs thoroughly before blanching to limit dirt sticking to the ribs, making them difficult to clean when blanching.
- Blanching the ribs before cooking will help remove some of the unpleasant smell and make the broth clearer.

Marinate the ribs
Put the ribs into a large bowl, marinate with 1 tablespoon of seasoning, 1 tablespoon of sugar, 1 teaspoon of pepper, 1 tablespoon of fish sauce, and 1/2 teaspoon of salt.
Add 1 tablespoon of minced shallots, 1 tablespoon of crushed scallions, and 2 tablespoons of annatto oil. Mix well and marinate the ribs for about 20 minutes to absorb the flavors.

Prepare the shrimp and boil the quail eggs
Buy shrimp, remove the heads, leaving the tails, then rinse with water and let them drain.
Next, place the shrimp on a plate, marinate the shrimp with 1/2 tablespoon of minced shallots, 1 teaspoon of seasoning, 1/2 teaspoon of pepper, 1/2 tablespoon of fish sauce, mix well and let the shrimp marinate for about 20 minutes.
When you buy quail eggs, rinse them briefly with clean water, then put them in a pot of water and boil over medium heat for about 4 – 5 minutes, then take them out to cool and proceed to peel the eggs.
Tip: When boiling eggs, add 1 teaspoon of vinegar to the pot to make peeling easier. -
Stir-fry the shrimp
Place a pan on the stove, turn on medium heat to heat the pan. Add 2 tablespoons of cooking oil to the pan and then sauté 1/2 tablespoon of minced shallots until fragrant.
Next, add the shrimp and stir-fry for about 4 – 5 minutes until cooked, then turn off the heat.
Tip: Stir-fry the shrimp first to prevent it from being fishy when cooking the broth. -
Sauté the ribs
Place a pot on the stove, turn on medium heat to warm the pot, add 2 tablespoons of cooking oil to the pot, and sauté 1 tablespoon of minced shallots and 1 tablespoon of minced green onions until fragrant.
Then add the ribs and sauté until they are browned.
Tip: Sautéing the ribs until they are oily and browned helps them absorb the seasoning better and enhances the aroma when cooking the broth. -
Cook the broth
After sautéing the ribs, add 1 liter of water to the pot, lower the heat, and bring the broth to a boil.
When the water boils, add the sautéed shrimp and peeled quail eggs to the pot, season to taste, and let it boil for another 5 – 7 minutes before turning off the heat.

Completion
Add 500ml of water to another pot, place it on the stove, and bring the water to a boil. Once boiling, briefly blanch the Quang noodles for about 2 minutes.
Then remove the noodles and place them in a bowl, add herbs, bean sprouts, then scoop in shrimp, pork ribs, and quail eggs into the bowl, add a bit of chopped green onions, ladle in the broth, and sprinkle with some crushed roasted peanuts to enjoy.
