Vegetarian noodles 1 pack Kimchi 500 gr Snow mushrooms 100 gr Tofu 50 gr Fried tofu 1 stick Vegetarian sausage 50 gr Carrot 50 gr White cauliflower 50 gr Young corn 50 gr Sweet corn 50 gr Chili 1 piece Sugar 5 teaspoons Vegetarian seasoning 1 teaspoon Soy sauce 2 teaspoons Cooking oil 1 tablespoon

How to prepare Spicy Vegan Kimchi Noodles

  • Prepare the vegetables

    Cut the fried tofu into pieces about 5cm long, soak in water for 4 – 5 hours to soften, then remove and drain. Cut the white tofu into rectangular strips about 5cm long.

    Remove the tough stems from the snow mushrooms, wash thoroughly and drain.

    Peel the carrot, wash clean, and slice thinly. Separate the cauliflower into small florets, wash clean, and drain.

    Wash the baby corn and drain. Cut the corn cobs into short pieces.

    Wash the green onions and cut them into sections. Slice the chili.

  • Cook the broth

    Put 1 tablespoon of cooking oil into a pot, heat it, add the green onions and sauté until fragrant, then add the fried tofu and stir a few times, add 500ml of filtered water, sweet corn, carrot, bring to a boil over high heat, then add the baby corn, reduce to medium heat, cook for another 5 minutes, then add the cauliflower and continue cooking for another 15 minutes.

    Note: During the broth simmering process, occasionally stir to ensure the ingredients cook evenly and skim off the foam to keep the broth clear.

    After simmering the vegetable broth for about 20 minutes, add 1/2 of the kimchi, wait for the water to boil again, then season the pot with 1.5 teaspoons of sugar, 1 teaspoon of vegetarian seasoning, 2 teaspoons of soy sauce, stir well, and then add the white tofu, boil a little longer, and turn off the heat.

  • Completion

    Take a portion of noodles and place them in a ceramic pot, take from the broth pot: kimchi, carrots, cauliflower, mushrooms, sweet corn, baby corn, tofu, and tofu skin, layer them on top, then add vegetarian sausage, green onions, a few slices of chili, a little fresh kimchi, and finally drizzle more kimchi juice for an attractive red color.

    Next, scoop an adequate amount of broth into a bowl, place the bowl on the stove, boil for 2 minutes, then turn off the heat.

    Remove the pot, mix the noodles well, and you can enjoy.

    Note: Divide the ingredients in half to use for 2 bowls of noodles.

  • To choose delicious chicken thigh mushrooms, you should prioritize selecting mushrooms with bright colors and a length of 12 – 15 cm.
  • The cap of the mushroom is spherical, brown, shiny, with a thin layer of fibers on top, and no scratches or tears. The stem is white, looks and feels very firm, with uniform color.
  • When fresh, chicken thigh mushrooms will have a very distinctive aroma similar to almonds.
  • You should not choose mushrooms that are too long because the inside can easily be hollow and lacks fresh flavor. Additionally, you should avoid mushrooms that have an unpleasant smell or are bruised.

How to choose fresh oyster mushrooms

  • Currently, there are many types of oyster mushrooms, regardless of the type you choose, you should select mushrooms with a firm stem; the caps can be large, gray or white (depending on the type). The tip of the mushroom is slightly concave, and under the cap, there are thin fibers.
  • Fresh oyster mushrooms usually grow in clusters, are bright, and have a characteristic mushroom aroma.
  • If making stir-fried dishes, you should choose brown oyster mushrooms because they are crunchier, chewier, and sweeter. For porridge or hot pot dishes, you can choose white oyster mushrooms.

  • Prepare the ingredients

    First, wash the chicken leg mushrooms and cut them into small pieces. For enoki mushrooms and oyster mushrooms, tear them into small pieces. Then soak all the mushrooms in salt water for about 15 minutes.

    After soaking, take the enoki mushrooms out, wash them thoroughly, and let them drain. For the oyster mushrooms and chicken leg mushrooms, squeeze out the water, rinse with clean water, and squeeze again. Repeat this process 2-3 times until the mushrooms are free of any odor.

    Peel the corn, remove the corn silk, and wash it clean, then cut it into pieces. For the coriander, clean it, wash it thoroughly, and then chop it finely.

    Next, turn on the stove, place a pot on it, add 200ml of water, add corn, 1 teaspoon of rock sugar, and then bring it to a boil.

    When the water boils, reduce the heat to low, add the entire packet of spicy noodle seasoning along with 1 teaspoon of chili powder (you can adjust to taste), and 1 teaspoon of kimchi powder, then cook for another 5 minutes before removing the corn.

    You can add the broth, mushrooms, and noodles into a clay pot, then cook on high heat or directly add the noodles and mushrooms into the broth pot.

    Cook for an additional 5 minutes until the noodles and mushrooms are cooked, then serve in a bowl, adding various herbs on top to enjoy.
