How to choose safe and delicious clams

  • To choose good and fresh clams, you should buy ones that are still in their shells, without a fishy or overly strong smell. When you touch the clams and see the shells slowly close, that means the clams are still alive.
  • You should not choose clams with chipped, broken, or crushed shells as these are likely to be contaminated with harmful bacteria.
  • You can buy clams that have already been shelled, but make sure to choose those that are still warm, not slimy, and have a fresh smell, with a creamy white color and no strange hues.
  • Additionally, you should not buy clams that have been frozen or packed in bags, as they may no longer be fresh or have been treated with chemicals.

How to choose fresh and delicious spinach

  • You should choose spinach that has a uniform green color from the leaves to the stems, with many shoots, fewer leaves, and leaves that are not too big or too small.
  • Choose fresh, sturdy spinach and when you press it, it should still be crispy and have a lot of slime.
  • You should not choose spinach with large, glossy leaves, pale color, few shoots, and thick stems as these may have been treated with growth hormones.

How to make Clam Soup with Malabar Spinach

  • Prepare Malabar Spinach and Clams

    For the Malabar spinach, pick the young leaves, discarding the wilted and damaged ones. Then, wash the spinach with salted water and rinse again with clean water, draining it in a basket to let it dry.

    The clams you bought should be rinsed with warm water, seasoned with half of the chopped green onions and half a spoon of seasoning powder. Next, mix well and let the clams absorb the seasoning for 5 minutes.

    Note: To make the clams more fragrant, you should use the green onion roots for marinating!

  • Make Clam Soup with Malabar Spinach

    First, place a pot on the stove and boil 500ml of water. When the water boils, add the marinated clams, cooking until it boils vigorously, then skim off the foam, seasoning with half a teaspoon of salt and half a teaspoon of monosodium glutamate, then adjust the taste to your liking.

    Next, add all the Malabar spinach, stir for about 1 minute, then turn off the heat. Finally, add the chopped green onions and half a teaspoon of ground pepper.
