Rice noodles 200 gr Pork skin 300 gr Pork leg 1 piece (about 500gr) Minced pork 200 gr Pork tenderloin 300 gr Dried squid 1 piece Dried shrimp 20 gr White cabbage 2 heads Onion 1 bulb Shallot 3 bulbs Spring onion 3 stalks Fried onion a little Cooking oil 1 tablespoon Rock sugar 2 tablespoons White wine 2 tablespoons Fish sauce 1 teaspoon Vinegar a little Common seasoning a little (salt/ sugar/ monosodium glutamate/ seasoning powder/ pepper)

  • Choose the pig skin under the layer of tenderloin, lean shoulder meat; thick, flat pieces of skin that are large will be easier to process.
  • Avoid choosing belly skin because this part lacks tension, is thin, easily torn, and not crispy.
  • Choose pieces of skin that have a rosy color, not too white, without bruises or signs of blood clots.
  • When pressing with your hand, the skin should have good elasticity and no strange odors.

How to choose fresh pig trotters

  • The best trotters are from the front legs due to their active use, resulting in thinner, softer, sweeter meat with more tendons.
  • The meat of the trotters should be bright pink, with intact hooves, and no strange fishy smell.
  • When pressing with your hand, the meat should have good elasticity and not sink in.
  • Avoid buying trotters that are water-logged and have yellow fluid leaking out when cut. If white, round spots like rice grains appear on the meat, it indicates the pig had tapeworms before slaughtering.

  • Choose meat that has a bright pink color, with a dry membrane, slightly tightened surface, and soft fibers.
  • When pressed, the meat should have good elasticity, be dry, and not ooze slime.

  • Prepare the broth ingredients

    Pork shank and pork bones cut into bite-sized pieces, then wash thoroughly with water. Dried shrimp washed with water once to remove dirt stuck on the outside.

    Grill the dried squid on the stove for about 1 minute, let it cool, then crush and shred it.

    Onion peeled, washed, and cut in half. White radish peeled, washed, and cut into pieces about 2 finger lengths.

  • Cook the broth

    Add to the pot: pork shank, pork bones, dried shrimp, dried squid, onion, and white radish cut along with 2 liters of filtered water, bring to a boil.

    Pork skin should be washed in a mixture of diluted salt water mixed with a little vinegar for about 3 minutes, then rinse with clean water and drain.

    Use a knife to remove the excess fat under the skin, then tightly roll it to make the skin round, and tie the ends with string to secure the pork skin.

    Boil water in a pot with 2 shallots, 2 tablespoons of white wine, 1 teaspoon of salt, stir well, then add the pork skin and boil for about 7 minutes, then take it out and put it in a bowl of cold water for 5 minutes to keep the skin crispy.

    Tip: Cleaning the fat will help the rolled pork skin look better and be less greasy when eaten.

  • Stir-fried minced meat

    Heat a pan with 1 tablespoon of cooking oil and 1 teaspoon of minced shallots until fragrant, then add the minced meat and stir well.

    Season with 1 teaspoon of seasoning, 1/3 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1 teaspoon of fish sauce, and stir-fry for about 5 minutes until cooked.

    Add 1 teaspoon of pepper, stir well, and then turn off the heat.

  • Boil the meat and complete the broth

    The broth pot after cooking for about 30 minutes should have the tenderloin added.

    Add 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 2 tablespoons of rock sugar, and stir well.

    After boiling for about 7 – 10 minutes until the tenderloin is cooked, remove it, adjust the seasoning to taste, and then turn off the heat.

    Boil the noodles in boiling water for about 7 – 9 minutes then remove and place them in cold water for 2 minutes to prevent the noodles from sticking.

    Cut the pork skin into thin slices and slice the tenderloin into bite-sized pieces.

    Place the noodles in a bowl, layer the tenderloin, pork skin, chopped green onions, and minced meat, then pour the broth over and add some fried onions along with ground pepper, and it’s ready to enjoy.
