Pork ribs 1 kg Napa cabbage 500 gr Potatoes 150 gr Onion 1/2 bulb Spring onion 5 stalks Sesame leaves 1/2 bunch (or perilla) Garlic 1 bulb Green chili 2 pieces Enoki mushrooms 100 gr (for serving) Korean chili powder 9 tablespoons Korean soybean paste 5 tablespoons Mirin 3 tablespoons Fish sauce 3 tablespoons Soy sauce 6 tablespoons Salt/ pepper a little

  • You should choose potatoes that are yellow, as they will be tastier and more nutritious than white ones.
  • Do not choose potatoes that have sprouted or have green skin, as these contain harmful substances for health.
  • Good potatoes are firm to the touch, with smooth skin, free from bruises or strange spots.
  • Do not buy potatoes with dents or deep scratches, as these will spoil quickly if not used immediately.

How to choose fresh pork ribs

  • Choose fresh rib pieces with a natural pink color, good elasticity when pressed, and no strange smell.
  • Choose ribs with flat, small bones, with more meat and less bone, as they will taste better.
  • Do not choose ribs with yellow fat, leaking liquid, or meat that is pale in color.

How to choose fresh napa cabbage

  • Fresh napa cabbage has a light green color at the top and gradually turns bright white from the stem to the base.
  • You should choose cabbages that are bright white, with firm stalks that tightly wrap the leaves together.
  • Do not take cabbages that are bruised or have dark spots on the leaves.
  • Do not choose cabbages with dark green stalks, as these are older, less sweet, and less crunchy, with lower nutritional value than firmer stalks.

How to prepare Korean potato soup with pork bones

  • Prepare the pork ribs

    To remove the smell from the pork ribs, after purchasing, chop them into bite-sized pieces, wash thoroughly, then soak the ribs in diluted salt water for about 10 minutes, then take them out and rinse again with clean water.

    Next, place the pork ribs into a pot, add enough water to cover the bones, place the pot on the stove, turn on medium heat and boil for 5 minutes, then turn off the heat, take out the pork ribs, rinse them again with water until clean and let them drain.

    How to clean pork bones properly, without odor

    • Besides the method above, you can soak them in water mixed with 15gr of baking soda and 15ml of rice vinegar for about 15 – 20 minutes. This soaking will remove any remaining dirt and help the pork bones soften faster when cooked.
    • You should remember to wash the pork bones very clean and carefully; if the bones are no longer smelly and there are no blood traces left on the meat, the soup will taste better when cooked.

  • Prepare vegetables

    Wash the green onion and cut into pieces. Remove old leaves from the perilla and wash them. Slice the green chili.

    Peel the garlic, keep half of the cloves whole and chop the other half. Peel the onion and cut off the old root.

    Cut the napa cabbage in half, remove the root, then wash the napa cabbage thoroughly with water and let it drain.

    Next, add 1 liter of water to a pot, place the pot on the stove, and turn on medium heat to boil the water. Once the water is boiling, add the napa cabbage and boil for about 5 minutes, then remove the napa cabbage and soak it in ice water for 5 minutes before draining.

    Tip: Soaking the napa cabbage in ice water after boiling helps it to be crispy and tastier.

    For the enoki mushrooms, cut off the roots, wash them, and boil them in the pot of water used to boil the napa cabbage.

    Peel the potatoes, wash them, and cut them into bite-sized pieces. Then, add the potatoes to the boiling water and blanch for about 3 minutes before draining.

  • Pork Rib Soup

    Put the pork ribs into a pot, add 2 liters of water, 1/2 onion, 1/2 part of green onion, whole garlic cloves, then place the pot on the stove and bring to a boil over medium-low heat.

    When the water boils, use a spoon to skim off the foam, and let the ribs simmer for 2 hours.

    After 2 hours, turn off the heat, remove the ribs to a bowl, and strain the broth through a strainer to extract the broth, discarding the onion, green onion, and garlic.

  • Make spicy chili sauce and mix with cabbage

    In a large bowl, add 9 tablespoons of Korean chili powder, minced garlic, 3 tablespoons of mirin, 3 tablespoons of fish sauce, 6 tablespoons of soy sauce, 5 tablespoons of Korean soybean paste, 1 teaspoon of pepper, and mix well to combine the ingredients.

    Then, tear the blanched napa cabbage leaves vertically into bite-sized pieces and add 3 tablespoons of the spicy chili sauce you just made, mixing well so that the cabbage absorbs the seasoning evenly.

  • Stewed Ribs with Potatoes and Cabbage

    Put the pork ribs into another pot, place the marinated napa cabbage on top, arrange the potatoes around, and add enough broth to cover the ribs.

    Then add 1 tablespoon of spicy sauce, half of the remaining green onion, sesame leaves, green chili, and 1 teaspoon of pepper, then place the pot on the stove to bring to a boil.

    Simmer the ribs for about 20 minutes, when the potatoes are soft, add 1/2 teaspoon of salt, stir gently, taste and adjust the seasoning, then turn off the heat.
