Clay pot rice is considered the quintessence of Vietnamese cuisine. It is a dish cooked in a clay pot over a wood fire. However, nowadays, the use of wood stoves is limited due to environmental pollution. Today, let’s go to the kitchen to learn how to cook clay pot rice using a rice cooker simply and easily.

Choosing Rice

To cook delicious clay pot rice, with soft grains that do not become mushy, you should choose new Tám xoan rice, long, slender, flat, and pointed at the ends. The selected rice should have a clear green color and a gentle natural aroma.

You should avoid selecting old rice, stored for a long time, with signs such as rice being milky, infested with pests, turning yellow,… Because these types of rice will significantly reduce the quality of the final product.

Choosing Chicken Eggs

For industrial chicken eggs, you should choose eggs with dark and uniform shells, not cracked or having black spots. These are fresh eggs, ensuring they are not rotten, spoiled, or rotten,…

If choosing fresh chicken eggs, you should buy eggs with slightly rough shells, bumpy. These are freshly laid eggs because the tiny pores have not yet closed, creating a rough texture when touched.

In addition, you need to choose those with a thin outer layer made from pig intestines and are carefully processed, without a greasy or strong oil smell. Because if the sausage contains too much oil, it will affect health when consumed.

How to Cook Clay Pot Rice Using a Rice Cooker

  • Prepare the Ingredients

    First, take a bowl and measure the prepared rice into it, then rinse it twice to remove dust and husk remnants. To prevent the rice from losing all its nutrients, do not rinse for too long.

    Next, wash the rice cooker thoroughly and remove any leftover rice, then let it dry.

    For the green onions, wash them and chop them finely, using only the green parts; peel and slice the red onions and garlic thinly; for sweet corn, separate the kernels; after soaking the sausage and mushrooms, slice them about 2 – 3 mm thick.

    First, you smear a layer of cooking oil around the clean rice cooker so that the finished product does not stick to the pot.

    Next, pour in the rinsed rice and enough water, with the distance from the surface of the rice to the surface of the water being about 1 cm. You can adjust it according to the type of rice you have bought so that it does not become too mushy or too dry.

    Finally, you just need to plug it in, press the button, and wait for the rice to cook.

  • Making the sauce

    First, you add 1 tablespoon of cooking oil to the pan, then add sliced garlic and shallots and sauté until golden.

    When the shallots and garlic are cooked and change to a golden color, add 2 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of oyster sauce, and about 6 tablespoons of water, bring to a boil, then turn off the heat.

    After the rice is cooked, arrange the ingredients of corn, bok choy, mushrooms, sausage, and eggs in the pot one by one.

    Next, drizzle 1/2 tablespoon of sesame oil evenly around the rice, turn on the stove to the rice cooking mode, and continue to wait until all the ingredients are thoroughly cooked.
