Prepare and Marinate the Beef
After buying the beef, wash it with diluted salt water, then rinse gently with clean water and let it drain. Use paper towels or a clean cloth to dry the remaining water on the beef. Then cut the beef into small pieces.
How to clean and prepare beef without odor- For thinly sliced beef: You should not clean or wash the beef too thoroughly, as doing so will cause some nutrients in the beef to dissolve in the water and be lost during the cooking process.
- For whole pieces of beef: You can use white wine, ginger, salt, lemon or vinegar, then rub it on the meat and let it sit for about 5 – 10 minutes before rinsing it clean with water.
- Additionally, while marinating the meat, you can roast a shallot, peel it, mash it, and marinate it with the beef as it will help eliminate odors very effectively.

Marinate the beef with 1/3 teaspoon minced ginger, 1/2 tablespoon minced garlic, 1/3 teaspoon pepper, 1 teaspoon seasoning, 1 teaspoon sugar, and 1 teaspoon fish sauce, then mix well and let the beef absorb the spices for 30 minutes.

Prepare the remaining ingredients
Green onions are washed thoroughly and then chopped finely. Red beans are soaked in water for about 2 hours until they expand, then boiled for 20 minutes until cooked.
Straw mushrooms are trimmed to remove the stems and any bruised parts, soaked in diluted salt water for 5 – 10 minutes. Rinse thoroughly with cold water and let drain, then cut into thin slices suitable for eating.

Wash the rice thoroughly and soak it in water for about 30 minutes.
Tip: Soaking the rice before cooking will help the rice grains soften more quickly, and they will cook evenly and taste better.Bring a pot of water to a boil, add all the rice, and cook until the water boils again. Cover the pot tightly and continue to cook on low heat for about 20 minutes. When the rice grains begin to soften, add the red beans to the pot, stir well, and simmer on low heat for another 20 – 30 minutes.
Tip:- The porridge may burn at the bottom of the pot, so you should stir it regularly with a ladle.
- If the porridge seems a bit thick, you can add more water to ensure the grains can expand evenly.
- You can also use an electric pressure cooker (instant pot) to cook the porridge faster.

Sauté mushrooms and beef
Place a pan on the stove and add 1 tablespoon of cooking oil to the pan, when the oil is hot, add 1/2 tablespoon of minced garlic to sauté until fragrant, then add the mushrooms to stir-fry, seasoning with 1/3 teaspoon of salt. Stir-fry the mushrooms for about 2 – 3 minutes, then remove the mushrooms and add them to the porridge pot.
Continue to add the beef to the pan, stir-frying evenly over medium heat for about 3 minutes until the beef is just cooked, then turn off the heat, add the beef to the pot and stir the porridge well.
Cook the porridge for another 2 minutes, adjust the seasoning to suit your family’s taste, then sprinkle chopped green onions and pepper on top, turn off the heat and serve the porridge in a bowl to complete.
