How to choose fresh, delicious minced meat

  • Good minced meat is usually made from meat that has both lean and a bit of fat. Minced meat will be soft, fatty, not dry like made from lean meat, and also not too greasy.
  • When buying pre-ground minced meat, you should choose meat that has both lean and fat, with a fresh pink color, no foul smell, and no watery leakage.
  • If you buy meat to grind yourself using a meat grinder, choose pork pieces that are bright in color, and when pressed, the meat should bounce back. The meat should not be dull in color, have no foul smell, or be watery.

  • Shallots, also known as scallion, are a type of plant belonging to the onion family, primarily distributed in Europe, Asia, and North America.
  • Shallots have a spicy, slightly sweet taste, a strong aroma, and are often used as a seasoning to create flavor in dishes.
  • You can find shallots at large supermarkets, agricultural markets, or reputable e-commerce sites.

How to make Shallot Porridge

  • Prepare the ingredients

    Wash the shallots briefly and then soak them in diluted salt water for about 10 – 15 minutes.

    Remove the roots and wilted leaves from the green onions, wash them clean, and chop them finely.

  • Roast rice and cook porridge

    Put a pot on the stove, add 200g of rice and roast until the rice grains are fragrant, no need to roast until golden.

    Then add water until it reaches just under the mouth of the pot by 2 finger widths and cook on low heat until the rice expands into soft porridge.

  • Stir-fry meat

    Put a pan on the stove, add 2 tablespoons of cooking oil, heat it up, and then sauté 1 tablespoon of minced garlic until fragrant.

    Then add minced meat along with 2 teaspoons of seasoning and stir-fry on high heat for about 5 minutes until the meat is firm, then turn off the heat and transfer it to a bowl.

  • Cook porridge with shallots and finish

    When the rice grains have expanded, add 2 teaspoons of salt, 1 teaspoon of monosodium glutamate, and 1 teaspoon of seasoning to the porridge for taste.

    Then add half of the shallots to the porridge, stir well, and turn off the heat.

    Finally, scoop the porridge into a bowl, add some shallots, minced meat, a bit of pepper, and chopped green onions, then stir and enjoy while it’s still hot.

  • Final Product

    The mashed onion dish (scallions) has a characteristic aroma from the sweet onion, slightly spicy combined with the sweetness of minced meat, blended with the flavor of pepper and hot chili that will surely warm you up on rainy, cold days.
