Wash rice and cook porridge
Wash the rice lightly in 2 rinses to clean.
Add the rice into a pot with 1 liter of water along with 20g of dried shrimp, put it on the stove and cook over medium heat.

Prepare and pound shrimp
Fresh shrimp, peel, remove the head, and rinse briefly. Place the shrimp in a large bowl with 1 teaspoon of salt, gently squeeze and rub to clean the shrimp’s slime, then rinse with cold water. Rinse again with 200ml of young coconut water.
Use a towel to pat the shrimp dry. Place the shrimp in a mortar and pound until fine, then add 1 stalk of green onion to pound together.
Season the shrimp paste with 1/2 teaspoon of seasoning, 1 tablespoon of fish sauce, 1/2 teaspoon of pepper, and continue to pound until the seasoning is mixed into the shrimp.
