How to choose fresh, delicious salmon fillet
- A piece of fresh salmon fillet usually has a bright pink or orange color. You should not choose fillets that have turned darker because the fish meat has spoiled or is about to decompose.
- Good salmon fillet will have excellent elasticity. When you press your finger into the fish meat and it leaves a dent but quickly returns to its original state, the fish is still fresh.
- You should choose pieces of meat that are dry, not wet or leaking strange fluids. The fat stripes on the fish are evenly colored and bright, not dull or with brown spots.
- Additionally, fresh salmon fillet will have a characteristic fragrant smell, without any spoiled or strange odors.

Prepare the salmon
Fillet the salmon, wash it clean with water, then use lemon to gently rub the fish meat to remove the fishy taste.
Soak the fish in 300ml of unsweetened fresh milk for about 15 minutes to eliminate the fishy smell and to make the fish tenderer.
After soaking the fish, use a paper towel to blot up any excess milk on the fish meat.
Use a knife to slice the salmon fillet into thin pieces about 1/2 finger length for cooking.
-
Stir-fry salmon
Add 2 tablespoons of olive oil to the pan, heat over high heat until the oil is slightly bubbling, then add 1 teaspoon of minced ginger and stir-fry until fragrant.
Next, add the sliced salmon and stir-fry with 1 teaspoon of seasoning, 1/2 teaspoon of sugar. Use a spoon to stir well for about 5 minutes, when the fish starts to firm up, add 1 teaspoon of pepper and continue stirring for another 2 minutes, and it’s done.
