How to Cook Salted Black Bean Porridge

Soak Black Beans
Soak the black beans for about 2 hours before cooking to soften them and cook faster.

Rinse the rice
Rinse the sticky rice and regular rice about 2 – 3 times.

Cook the porridge
Add sticky rice, regular rice, and black beans to cook with 2 liters of water.
Wait for the water to boil, skim off the foam, and occasionally stir the porridge.
Tip: Only stir the porridge in one direction to avoid making it lumpy. -
Make the scallion water to soak the beans
Chop the scallions finely and put everything in a bowl. Add 220 ml of cooled boiled water, 110 ml of soy sauce, and 1 tablespoon of seasoning powder, then stir well.

Fry the tofu
Cut 3 large pieces of tofu, wait for the oil to heat up, then add all to fry until golden.

Soak the tofu in scallion oil
When the tofu pieces are evenly golden, take them out and immediately place them into a bowl of scallion oil. The heat from the tofu will help cook the scallions and reduce the strong smell.

Scoop the porridge into a bowl, gradually add the scallion-coated tofu, salted egg, and 2 halves of salted egg. Now you have a hot bowl of porridge that is extremely effective for refreshing.
Tip:
- You can use a rice cooker with a porridge cooking function to make cooking porridge easier.
- If you are concerned about frying tofu with a lot of oil, cook them using an air fryer.
