Prepare and Blanch Pandanus Leaves
Wash the pandanus leaves and the water spinach leaves thoroughly, then chop the pandanus leaves while letting the water spinach drain.
Next, bring a pot of water to a boil and add the pandanus leaves and water spinach to blanch for about 2 minutes. Once the water is boiling again, remove them to a strainer.
Tip: Use water spinach leaves to enhance the green color of the pandanus extract, making it more vibrant and visually appealing. -
Strain the Pandanus Leaf Extract
Next, add the pandanus leaves and water spinach to a blender with 500ml of filtered water and blend until the pandanus leaves are finely ground. Then, strain the pandanus leaf extract through a sieve to collect the juice, discarding the pulp.

Cook pandan leaf water with sugar
Pour the extracted pandan leaf juice into a pot, then add 200g of rock sugar and the juice of 1/2 lemon into the pot, stir well and place the pot on the stove.
Cook the pandan leaf water on low heat for about 7 minutes until the sugar is completely dissolved, then turn off the heat, add 1 vanilla stick and stir well to finish.
