How to choose fresh shrimp
- Fresh and good quality shrimp usually have a transparent outer shell, not cloudy or overly dark.
- Pressing the shrimp with your hand should feel firm and elastic, especially if the shrimp is still lively, has strength, and can still jump away, not staying still in one place.
- Observe the shrimp’s tail; if it curls up, it is of good quality, while a tail that spreads out means you should not buy it as it indicates the shrimp has been injected with water to look plumper.
- You should limit buying shrimp with broken legs, overly soft flesh, or that emit an unusual fishy smell as these are shrimp that have gone bad due to being kept for too long.
How to choose fresh squid
- Fresh squid is characterized by bright, clear eyes, where you can see the pupil, not cloudy or turning yellow, and especially not bulging out excessively.
- The body should have a milky white opaque color, and when touched, the squid should feel firm and elastic, not too soft.
- You should limit buying squid with heads that are no longer tightly attached to the body, especially if they are unusually slimy because these are squid that have gone bad, which can affect your health.
How to choose fresh and delicious scallops
- Currently, there are mainly 2 types of scallops widely sold on the market, which are whole scallops or those that have been pre-shelled. However, for either type, you should find a reputable place to avoid buying low-quality scallops.
- For whole scallops, you should buy those with intact shells, not gaping mouths; if the mouth is not closed, it means the scallop is dead and will not taste good.
- If you are using scallop meat that has been pre-shelled, then choose scallop meat that has a slightly translucent white color. When you press it with your hand, it should have a moderate softness, good elasticity, and firmness, not too dry.
- You should limit buying scallop meat when you smell an unusually fishy odor, especially if it is slimy, as this indicates the scallop has gone bad and should not be eaten.
How to choose fresh and delicious oyster meat
- For oysters, there are also mainly 2 types sold, which are whole oysters and those that have been pre-shelled. However, you should use the pre-shelled type as it will not take too much time to prepare.
- Fresh and delicious oyster meat is bright white, looks plump and fatty; if it has turned yellow or green, you should absolutely not buy it.
- When you press it with your hand, the oyster meat should have good firmness, noticeable elasticity, and not be mushy.
- You should avoid buying excessively thin oyster meat, especially if it is slimy and emits a strong fishy odor, as this indicates the oyster has gone bad.
How to Cook Seafood Porridge

Cooking Rice
First, rinse 1/3 cup of rice (the type used for meals) 1 – 2 times with clean water. At the same time, add the rinsed rice into an pot placed on the stove, and toast it on low heat for about 2 – 3 minutes.
When the rice starts to release a fragrant aroma and turns slightly yellow, add 1 liter of water, increase the heat to medium, and cook for about 30 minutes.

Prepare seafood and other ingredients
With 200g of squid purchased, you wash it with 2 tablespoons of vinegar diluted for about 3 – 5 minutes, while removing the beak at the head and the backbone from the body, then wash again 1 – 2 times with clean water, drain, and use a knife to cut into bite-sized pieces.
Shrimp should be rinsed briefly with water to clean, then use your hands to remove the head, legs, and the intestinal thread on the back.
Next, put all the seafood including squid, shrimp, scallop meat, and oyster meat into a bowl and marinate with 1/2 teaspoon of seasoning, 1/2 teaspoon of sugar, and 1 teaspoon (5ml) of fish sauce, using chopsticks to mix well and let the seafood absorb the seasoning for 15 minutes.
Green onions and coriander should have their roots removed, washed directly under running water until clean, drained, and then chopped finely with a knife.
For ginger and garlic, peel them and divide them into 2 parts. The first part should be minced, while the other part remains whole. Finally, peel the shallots and mince them.
Tip: Depending on your preference, you can peel the shrimp shells, but adding the shrimp shells when cooking the porridge will make it sweeter. -
Make seafood dipping sauce
You put 2 small chili peppers, the garlic, and ginger you set aside earlier, along with 1 tablespoon of sugar into a mortar, and use a pestle to grind them finely.
Next, you take a bowl and add 1 tablespoon of hot water, the juice of 1/2 lemon, 1 tablespoon (15ml) of fish sauce, and the mixture you just ground, then use a spoon to mix well. Once the sugar has dissolved, you can adjust the seasoning to taste.

Stir-fry seafood
Once the ingredients are prepared, you place a pot on the stove with 2 tablespoons of cooking oil and heat it over medium heat. When the oil begins to shimmer, add the minced shallots, garlic, and ginger to sauté until fragrant.
Then, you add all the marinated seafood, using chopsticks to stir-fry for about 5 – 7 minutes, until the seafood is slightly firm, then turn off the heat.

Making seafood porridge
When the rice has completely bloomed, you gradually add the stir-fried seafood along with all the frozen ingredients into the porridge pot, and continue to cook over medium heat for about 7 – 10 minutes.
Next, you season with 1/2 teaspoon of salt, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of sugar, and 1 teaspoon (5ml) of fish sauce, using a ladle to stir well.
Finally, when all the ingredients are soft and cooked, you taste and adjust the seasoning to your liking, then turn off the heat, serve the porridge in a bowl with green onions and cilantro, and enjoy!
