How to choose good quality eggs

  • To buy good eggs, the first and simplest thing is to observe the eggshell. Accordingly, quality eggs will have a uniform color, no cracks or dark spots.
  • When you touch the egg, if you feel a slight roughness, the surface is uneven, then it is guaranteed to be fresh eggs. Because if it is a freshly laid egg, the small pores on the surface of the egg have not closed yet, so you will feel a slight roughness.
  • You can also check the quality of the egg by gently shaking it and bringing it close to your ear to listen. If you do not hear any noise, then it is a fresh egg.
  • In addition, you can shine a light on the egg. A good egg will have a small air chamber, the yolk will be round, not moving and balanced in the middle of the egg, while the egg white will be transparent.

How to make Shoyu Ramen

  • Prepare the ingredients

    After purchasing, cut off the roots, damaged leaves, and base of the green onions, then wash them clean, and use a knife to chop them finely.

    For ginger, peel it clean, wash it, and then grate it finely.

  • Making Eggs

    First, you place a pot on the induction stove. Then, add water to the pot and cook until the water boils, then add the eggs.

    After adding the eggs, cook for about 6 – 7 minutes, then turn off the heat. Use a ladle to scoop the eggs into a bowl of water with a few ice cubes to make peeling the eggs easier later.

    Next, place another pot on the stove. Gradually add 1 tablespoon of Shoyu soy sauce, 1 tablespoon of Sake, and 1 teaspoon of sugar into the pot and stir the mixture well.

    Heat the mixture over low heat until small bubbles form, then add the peeled eggs. After that, use a spoon to roll the eggs back and forth to let them soak in the mixture evenly.

    After 4 – 5 minutes of rolling the eggs, they will have absorbed the seasoning and have a beautiful color. Remove the eggs and cut them in half.

  • Blanching Noodles

    You prepare a pot of boiling water, then drop the noodles into a ladle. Dip the ladle with the noodles into the pot of water, then use chopsticks to separate the noodle strands.

    After 3 – 5 minutes, the noodles will become soft, and you can scoop them into a bowl.

  • Make the broth

    You gradually add 1 tablespoon of Shoyu soy sauce, 1 teaspoon of chicken powder, prepped green onions, a little minced ginger, and 1 teaspoon of pork fat into a bowl.

    Next, you pour 300ml of boiling water into the bowl and stir well to dissolve the seasonings.

    You add the prepped noodles into the broth and mix well.

    Finally, you place the eggs, dried seaweed, and green onions on top, and it’s ready to serve.

    Shoyu Ramen has chewy noodles, and the broth carries the distinctive aroma of Shoyu soy sauce, ginger, and green onions. The eggs are infused with flavor.
