Prepare Ingredients
Mung beans soak in warm water for 1 hour, then drain.
Roast the peanuts until cooked, rub the peanuts to remove the skins, then crush the peanuts.

Prepare the grapefruit pulp
While soaking the mung beans, you proceed to separate the grapefruit pulp from the rind. You should not peel the rind too thinly because the essential oils in the rind will make the pulp bitter. Cut the white grapefruit pulp into small cubes.
Mix the grapefruit pulp with 2 tablespoons of salt, gently kneading to release all the bitterness from the pulp. Rinse several times with cold water to remove the salt.
Boil a pot of water with 1 tablespoon of salt, add the grapefruit pulp and blanch it briefly, then rinse thoroughly with cold water several times to remove the spicy and bitter taste of the pulp.
Marinate the grapefruit pulp with 100 g of sugar for 2 hours, then roll the pulp in 30 g of tapioca flour.
Prepare a bowl of ice water.
Boil a pot of water, then drop the tapioca-floured grapefruit pulp into it; when the pulp becomes translucent like filter flour and floats on the surface of the water, scoop it into the bowl of ice water, soak for 15 minutes, then scoop it back into a colander and let it drain.

Making fresh coconut milk
You can take advantage of the 2 hours marinating the grapefruit peel with sugar to make fresh coconut milk. The method is very simple: boil fresh milk, then pour it into a bowl containing grated coconut, wait about 15 minutes for the milk and coconut to blend together and for the mixture to cool down, then squeeze it well.
Using a cheesecloth or a filter bag, strain the mixture to collect the coconut milk, discarding the solids. Pour the coconut milk into a pot and bring to a boil, mix 10 g of tapioca starch with a little coconut milk, gradually pour it into the pot, stirring until the coconut milk thickens, then turn off the heat and let it cool. You can add a little salt and sugar to suit your taste.

Cooking grapefruit dessert
Add 2.5 liters of water to a pot, boil it with 150 g of sugar and the softened mung beans.
When the water boils, use the remaining 20 g of tapioca starch mixed with a cup of water and pour it into the pot, stirring continuously until the dessert thickens.
When the mung beans are soft and expanded, add the prepared grapefruit peel, stir gently, and simmer on low heat for 5 minutes.
Add 3 vanilla sticks to the pot, then turn off the heat.
