How to choose fresh lotus seeds

  • You should choose dried lotus seeds that are dull yellow or milky white, of moderate size, about half the length of a finger, and have a round shape.
  • You can use your fingernail to press on the dried lotus seed; if it feels moderately firm, not soft or too dry, then it can be selected.
  • Avoid choosing dried lotus seeds that are dark, chipped, or have strange smells, mold.

How to choose fresh longan

  • To make a delicious dessert, you should choose longan fruit because this type has thick, crunchy, sweet flesh and a stronger aroma compared to other types of longan.
  • You should choose clusters of longan still attached to the branch with sturdy stems and fresh leaves.
  • Good longan has a dark brown color, the veins on the longan skin are enlarged, the skin is slightly bumpy, and has a mild sweet aroma, indicating they are ripe and very sweet.
  • Avoid selecting longan fruits that have fallen from the branch, cracked skin, darkened, or have strange sour smells as these will be old longan and not fresh anymore.

How to make Lotus Seed Longan Dessert

  • Prepare lotus seeds

    You soak 100g of dried lotus seeds in water overnight or, if you want to be quicker, you can soak them in hot water for at least 3 hours before cooking. This will help the lotus seeds expand, making them soft, fluffy, and delicious when eaten instead of being hard.

    After soaking, use the tip of a knife to gently separate the lotus seeds and remove the lotus seed cores, trying to be as careful as possible so that the lotus seeds do not split in half.

    Tip: You can buy dried seeds that have had the cores removed to save time on preparation.

  • Cook the dessert

    You put the soaked lotus seeds into a pot, add enough water to cover, add 3 cleaned pandan leaves, then simmer the lotus seeds over medium heat for about 20 – 25 minutes. When the lotus seeds are fully bloomed and soft, remove them to a bowl.

    Next, add 500g of sugar into the pot of simmering lotus seeds and stir well. When the sugar has completely dissolved, put the lotus seeds back in, continue to simmer on low heat so that the lotus seeds absorb the sugar slowly without breaking.

    When the water boils again, taste the lotus seeds; if they are soft and sweet, turn off the heat and let the lotus seeds cool down.

    1kg of fresh longan, after buying, you peel the skin, separating the longan seeds from the flesh. You gently separate them so that the flesh retains its shape and does not break, then stuff the lotus seeds inside the longan flesh.

    Add 2 tablespoons of tapioca flour into a bowl, add a little water and stir to dissolve the flour, then pour into the dessert pot, simmer on low heat to boil evenly.

    Then, put the stuffed longan with lotus seeds back into the pot and cook over medium heat until the dessert boils again to complete.

  • Final Product

    The lotus seed and longan dessert, when completed, has a fragrant broth with the aroma of longan and a moderate sweetness. This dessert is a blend of sweet, refreshing longan and soft lotus seeds, which have a natural sweetness and are very palatable.

    After cooling, the dessert can be placed in the refrigerator to eat better. This dish also has many valuable health benefits, such as treating insomnia, indigestion, bloating, providing antioxidants, and beautifying the skin.
