How to choose fresh longan

How to make Lotus Seed Longan Dessert

Prepare lotus seeds
You soak 100g of dried lotus seeds in water overnight or, if you want to be quicker, you can soak them in hot water for at least 3 hours before cooking. This will help the lotus seeds expand, making them soft, fluffy, and delicious when eaten instead of being hard.

Cook the dessert
You put the soaked lotus seeds into a pot, add enough water to cover, add 3 cleaned pandan leaves, then simmer the lotus seeds over medium heat for about 20 – 25 minutes. When the lotus seeds are fully bloomed and soft, remove them to a bowl.
Next, add 500g of sugar into the pot of simmering lotus seeds and stir well. When the sugar has completely dissolved, put the lotus seeds back in, continue to simmer on low heat so that the lotus seeds absorb the sugar slowly without breaking.
When the water boils again, taste the lotus seeds; if they are soft and sweet, turn off the heat and let the lotus seeds cool down.
