Beef tendon 1/2 kg White rice 270 gr (1 can of rice) Shallots 5 bulbs Culantro 200 gr Green onions 200 gr Fish sauce 1.5 tablespoons Cooking oil 3 tablespoons Cashew oil 1 packet Common spices A little (MSG/ seasoning powder/ salt/ pepper)

  • Fresh and delicious beef tendons usually have a pinkish-white color and a strong characteristic smell of food. Avoid buying tendons that are yellowish or greenish as they are likely from sick cows or have been injected with antibiotics.
  • Absolutely do not buy tendons that are decomposing. These are pieces that are dry, pale white or green in color, leaking yellow fluid, and have an unusual foul smell, which is very harmful to human health.
  • When buying, you should pay attention to the scent of the tendons, avoid buying tendons that have no smell as they may be pieces that have been treated with chemicals.

  • Prepare the ingredients

    After purchasing, wash the beef tendons thoroughly with water, then place them in a basket to drain and cut into small pieces, placing them in a bowl.

    Peel the shallots and rinse them with clean water. Next, finely chop half of the shallots, and slice the remaining half thinly.

    Cut off the roots and remove any wilted leaves from the green onions and coriander, then wash them thoroughly and chop finely.

    Add the beef tendon to a bowl with 1/2 of the minced shallots, 1 teaspoon of ground pepper, and 1.5 tablespoons of fish sauce, then mix well. After that, marinate the beef tendon for 30 minutes to let the tendon absorb the seasoning.

    Place a pot on the stove, add 1.5 tablespoons of cooking oil. Wait until the oil is hot, then add the remaining minced shallots from the bowl and sauté until fragrant.

    Next, add the marinated beef tendon and stir until the tendon is firm.

    Once you observe that the beef tendon has shrunk, pour 500ml of water into the pot, cover it, and stew until the beef becomes tender.

    Tip: To make the beef tendon soften quickly as well as save time and gas, you should choose a pressure cooker for stewing.

    You put 1 can of rice into a basket or basin, then wash the rice with clean water to clean and remove impurities from the rice.

  • Sauté shallots

    You place a pan on the stove and add 1.5 tablespoons of cooking oil. Wait until the oil is hot, then add the sliced shallots and stir for a few seconds.

    Continue to add 1/3 package of annatto oil to the pan, stir evenly until the shallots in the pan turn golden, then turn off the heat.

  • Season the porridge

    After the porridge has cooked until soft, you open the pot lid and add 1/2 teaspoon of salt, 2 teaspoons of seasoning powder, 2 teaspoons of monosodium glutamate along with the sautéed shallots into the pot, then stir well.
