How to make Chive Soup with Tofu and Mushrooms

  • Prepare the ingredients

    Oyster mushrooms bought should be torn into bite-sized pieces, then soaked in diluted salt water for 20 minutes, rinsed out several times with clean water.

    Carrots should be washed clean, peeled, then use a knife to carve flowers and cut into thin slices.

    Dried shrimp should be washed with water, then soaked in boiling water for about 4 minutes until the shrimp swell and soften, then use a pestle to grind finely.

    Chive flowers should have the tough stems removed, then cut the tender parts and chive tops into pieces about 2.5 finger lengths.

    Tofu should be rinsed briefly with water, then cut into small square pieces with sides the length of one finger. Shallots and garlic should be peeled and minced.

    To stir-fry dried shrimp and mushrooms, add 1 tablespoon of cooking oil and minced garlic and onion into the pot, sauté until fragrant, then add the finely crushed dried shrimp along with oyster mushrooms, 1 teaspoon of pepper, and 2 teaspoons of fish sauce.

    Then stir well over medium heat for about 1 minute until the dried shrimp and mushrooms are cooked and fragrant.

    After stir-frying the shrimp and mushrooms, add 1.5 liters of water. Cook over medium heat for about 5 minutes for the dried shrimp and mushrooms to release their sweetness, then add the carved carrot, chopped chives, and tofu.

    Continue cooking over high heat for about 3 minutes until the carrot is soft and the soup is boiling, then reduce to low heat, add 1 teaspoon of sugar, 1 teaspoon of seasoning powder, and 2 teaspoons of seasoning.

    Stir well for the seasonings to dissolve, then taste and adjust the seasoning to your preference before turning off the heat.
