Prepare the ingredients
To remove the unpleasant smell of pork bones and beef, rub the bones and meat with 50 ml of white wine for about 10 minutes, then rinse thoroughly with several times of water.
Cut the beef into thin slices suitable for eating.
Wash the lemongrass, peel off the outer layers, smash the tender inner core, and cut into pieces about the size of a finger.
Wash the green onions and cilantro, trim the roots, and chop finely. Peel the shallots and mince them.
Wash the accompanying vegetables, chop them, and let them drain.
Effective ways to remove the smell of meat at home
- Remove the smell of meat by rubbing salt with fresh ginger around the piece of beef for about 5 minutes, then rinse with water.
- Massage the beef with a little lemon or vinegar and let it sit for a few minutes before rinsing to make the meat more fragrant.

Marinate the pork bones
Add the prepared pork bones into a bowl. Next, add gradually 1/2 packet of noodle soup seasoning, minced shallots, 1 tablespoon of sugar, 1/3 tablespoon of salt, 1/3 tablespoon of monosodium glutamate, 1/3 tablespoon of ground pepper, and 1/3 tablespoon of seasoning powder, then mix well.
Marinate the pork bones for about 30 – 45 minutes to let the bones absorb the seasoning.

Cook the noodle soup
Place a pot on the stove and add 2 tablespoons of cooking oil to heat. When the oil is hot and bubbling, add the crushed lemongrass along with the remaining 1/2 packet of noodle soup seasoning and sauté until fragrant and golden over medium heat for about 5 minutes.
Pour all the marinated pork bones into the pot and stir-fry for an additional 10 minutes until the bones are firm. Add 2 liters of water to the pot and simmer the bones for about 30 – 40 minutes over medium heat to achieve a fragrant and sweet broth.
After simmering, season with 2 tablespoons of fish sauce, 3 tablespoons of sugar, 1 tablespoon of seasoning powder, and 1/3 tablespoon of monosodium glutamate, then stir well to dissolve the seasoning. When the broth boils, taste and adjust the seasoning as needed.
Add the sliced beef onto a slotted spoon and place it into the pot of boiling broth. Blanch the beef for about 2 minutes until it is slightly cooked, then serve it in a bowl with noodles and bones, ladle the broth over, and enjoy right away!
Tip:
- To save time for breakfast, you can marinate the bones and simmer them the night before.
- If you want the broth to be even more delicious and sweet, you can add white radish or onion to simmer with the bones.
