How to choose fresh and delicious duck meat
- When choosing ducks, you need to select adult ones; the ducks should be fat, have a round breast, and the skin on the neck and belly should be thick for good quality.
- Additionally, the ducks must have all their feathers; the tips of the two wings should be just enough to cross each other, indicating the ducks are delicious and mature enough, resulting in firmer meat.
- Especially when selecting live ducks of the right age, the process of plucking feathers is relatively quick, and it does not take much time.
- Furthermore, avoid buying ducks that have laid many eggs, as their meat tends to be tough and less tasty, and these ducks usually have sagging lower bellies.
What is bỗng rượu?
- Bỗng rượu, also known as vinegar bỗng or bỗng rượu, is a type of sour seasoning commonly used in Vietnamese cuisine, especially in Northern Vietnam. Bỗng rượu is a byproduct of fermented rice used to naturally sour. When making wine, the leftover rice is called hèm.
- People use hèm to brew repeatedly to produce second and third batches of wine. The remaining solids are strained to extract the liquid, which naturally becomes sour over a day or two, resulting in bỗng rượu.

Prepare the duck meat
After cleaning the feathers and removing the inedible organs such as the intestines, wash the duck thoroughly. Use coarse salt to rub the duck to eliminate any unpleasant odors, then rinse with water.
Next, use a knife to cut the duck into bite-sized pieces.
How to clean the duck properly, without odor:- First, mix vinegar with salt and apply it evenly on the duck or soak the duck in that mixture for about 3 – 5 minutes. After that, rinse with clean water.
- Alternatively, you can use lemon juice mixed with a little salt and proceed as above.

Prepare the remaining ingredients
Peel the shallots and garlic, crush them, and then chop them finely.
Peel the galangal, wash it, and then pound it. Pick the young leaves of the Vietnamese coriander and wash them, then drain.

Marinate the duck meat
Marinate the duck meat with 1 tablespoon of seasoning, 1 teaspoon of pepper, 1/2 tablespoon of sugar, 1 teaspoon of chili powder, smashed galangal, 1/2 of the shallots, and 1/2 of the minced garlic. Mix well and let it sit for about 30 minutes for the duck meat to absorb the spices.

Stir-fry the duck and finish
Place a pan on the stove, add 1 tablespoon of cooking oil into the pan. When the oil is hot, add the remaining shallots and minced garlic along with 1 tablespoon of red color oil.
Sauté until the shallots and garlic are fragrant, then add all the duck meat into the pan, maintain medium heat and stir-fry for about 10 minutes until the duck meat is firm.
When the duck meat is firm, add 500ml of water along with 100ml of vinegar, 1 tablespoon of seasoning, and 1 teaspoon of fish sauce. Braise for about 40 minutes until the duck is cooked and the ingredients blend together.
Finally, season the dish to taste, add the prepared scallions and Vietnamese coriander, and it’s ready to enjoy.
