  • There are two types of fish: black fish weighing about 2 – 3kg, with a black back and a creamy white belly, and yellow fish weighing about 1 – 3kg with an entirely yellow body and a grayish-white belly.
  • Fresh fish will have white, firm flesh, thick but few bones, a sturdy body, and a proportional head and body.
  • You should buy fish that are still swimming, with clear eyes, shiny color, bright red gills, undamaged fins, scales that do not easily come off when touched, a flat belly, and a slightly white anus.
  • Absolutely do not buy fish with a bloated body, cloudy eyes, especially if they have a strange foul smell.

How to prepare Sour Pickled Carp

  • Prepare the carp

    After buying the carp, rinse it briefly with water. Then, to eliminate the fishy smell, take 1 tablespoon of salt and 1 sliced lemon to rub all over the fish, then rinse it thoroughly with water, let it drain, and use a knife to cut it into bite-sized pieces.

    Soak the pickled vegetables in cold water for about 10 minutes to reduce the saltiness. After 10 minutes, take them out, rinse well, and let them drain. Then, use scissors to cut the pickled vegetables into small bite-sized pieces.

    After peeling, chop the shallots finely. For green onions, dill, and herbs to accompany, remove the roots and old leaves, rinse thoroughly with water, and place them in a colander to drain.

    Wash the tomatoes, then dice them. Next, sauté a little onion, then add all the tomatoes and stir-fry for about 5 minutes until soft.

    You place the cleaned fish into the air fryer and fry at 200 degrees Celsius for 10 minutes.

    First, you heat a non-stick pan over medium heat, then add 1 tablespoon of cooking oil. When the oil is hot, add all the finely chopped shallots and sauté for about 2 minutes.

    After 2 minutes, you sequentially add the tomatoes and the prepped sour pickles and stir-fry for 3 minutes. Next, add 1 cup of water and 2 tablespoons of fish sauce to the pan, and continue cooking over medium heat for about 5 minutes.

    Then, you arrange the carp in the pot, and pour the sautéed pickles from the pan into the pot with the fish. After that, to prevent the fish from being fishy, you pour boiling water into the pot so that it just covers the fish and the sour pickles, then cover the pot. You stew the carp and sour pickles over low heat for about 30 minutes.

    After 30 minutes, the fish is cooked; you open the lid and add a little ground pepper and some herbs to the pot, adjust the seasoning to your taste, and then turn off the heat.
