How to choose fresh ingredients

How to choose fresh pig trotters

  • It is advisable to prioritize buying the hind trotters, as they will be tastier. Fresh trotters are those with intact hooves; after purchasing, you can ask the seller to cut them into smaller pieces.
  • If buying pre-sliced trotters, you should choose pieces that are firm, have even muscle fibers, with a dry cut surface, a bright pink color, and when pressed, they should have a high elasticity.
  • Do not buy meat that has a foul or fishy smell, meat that has changed color and is no longer bright red or pink, and has unusual spots on it as this indicates the trotters are no longer fresh or are from sick pigs infected with parasites.

How to choose fresh sweet potato leaves

  • Choose sweet potato leaves that are intact, not wilted, bruised, or infested with pests.
  • Choose thin leaves that look sturdy, with a color that is neither too dark nor too light green.
  • Avoid choosing curled leaves or those with abnormal shapes as they may indicate that the sweet potato leaves have been grown with excessive pesticides.
