    First, for the vegetable, you need to pick the young shoots and leaves. Remove the fibrous part of the stem and wash it clean.

    Soak the dry shrimp in warm water for about 15 minutes until they soften, then pound them finely.

    Peel the shallots, wash them clean, and slice them. For the ginger, peel it, wash it clean, and pound it finely.

  • Avoid choosing shrimp that are pale in color, with soft shells and flesh, as these are spoiled shrimp. Eating them will result in a texture that is neither firm nor sweet.

How to Make Fresh Prawn Mustard Greens Soup

  • Prepare the ingredients

    Mustard greens bought should have the young stems picked and the old, wilted stems discarded. Then soak them in diluted salt water for about 5 – 10 minutes, rinse thoroughly with water until clean, drain, and cut into small pieces suitable for eating.

    The prawns should be peeled clean, the heads removed, and the black vein on the back of the prawns should be cleaned out. If there is prawn roe, keep it aside, then wash the prawns. Crush half of the prawns in a mortar, leaving the rest whole.

    Green onions and cilantro should have the roots and wilted leaves cut off, washed clean, and then placed in a basket to drain. The red onion should be peeled, lightly washed for cleanliness, and then minced finely.

Do not let the vegetables overcook as they will lose their crispness and the green color of the broccoli.
