- Choose octopus with bright, clear eyes and a shiny white belly. The best octopus is still alive, moving quickly, and is agile when touched if it has been taken out of the tank.
- Choose octopus with a firm body that does not feel soft and watery to the touch, with smooth, fairly slippery skin on the back.
- Avoid choosing octopus with cloudy eyes and an off-white color, as this indicates the octopus has been stored for too long or soaked in water.
How to choose chili peppers for a delicious hot pot
- Choose chili peppers that are dark green, straight or slightly curved, with shiny skin, and a fresh green stem that is firmly attached to the pepper.
- Choose peppers that feel firm and have a certain hardness, not wilted or bruised.
- Avoid buying peppers that have black spots or signs of rot, or that are slimy.

Prepare the octopus
After buying the octopus, remove the internal organs and the ink sac. Add a little salt and rub the octopus until it is no longer slimy. Rinse with clean water.
Repeat about 2 – 3 times until the octopus is no longer slimy, then stop. Place the octopus on a plate and let it drain.
How to prepare octopus without a fishy smell- To eliminate the fishy smell of the octopus, you should gently cut off the eyes, ink sac, and internal organs, and rinse several times under running water.
- Rub the octopus with a mixture of salt and ginger or a mixture of salt and vinegar, then rinse well with several rounds of water.
- You can use flour or rice soaking water to soak the octopus to ensure it is completely clean and no longer slimy.

Prepare other ingredients
Lemongrass smashed, cut into pieces about 2 finger joints long. Garlic, shallots peeled and sliced thinly.
Thai chili picked, cleaned and kept whole.
Ginger peeled, one piece sliced thinly, another piece smashed with 2 red chilies.
Then mix the smashed ginger and red chili with 1 tablespoon of sugar, 1 tablespoon of lime juice, and 3 tablespoons of fish sauce to make ginger fish sauce.
Cherry tomatoes washed. Cucumbers washed, cut into quarters and then cut into bite-sized pieces. Lettuce removed from old, wilted leaves, keeping only the young green leaves and washed them clean. Thai basil, cilantro, water spinach, and perilla picked for leaves and young tops, washed clean.

Cooking green chili hot pot broth
Place a pot on the stove and add 2 tablespoons of cooking oil. Add sliced shallots, garlic, and ginger, and sauté until fragrant. Add smashed lemongrass and stir-fry for 1 – 2 minutes.
Next, add bird’s eye chili, stir well, then pour in about 1.5 liters of water and bring to a boil.
Season the hot pot broth with 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 tablespoon of seasoning powder, and 5 tablespoons of vinegar. Stir well and taste to adjust the seasoning.
After that, add cherry tomatoes and bring to a boil, and the hot pot broth is ready to serve.
Tip: You can adjust the amount of bird’s eye chili according to your family’s taste, but this hot pot dish is best enjoyed with a little spice. -
