  • When buying, you should observe the clam meat; if the meat is still fresh, it will not be slimy or discolored.
  • If you see that the clam meat is dry and does not contain much seawater, it may have been kept for a long time and is no longer fresh. Additionally, when separating the shell, the clam meat will stick tightly to the shell and contain a lot of seawater.

How to choose fresh tomatoes

  • You should choose tomatoes that have a bright red outer skin, with even color. The outer skin should be intact, without scratches, and plump, indicating fresh tomatoes.
  • Naturally ripened tomatoes often have a light fragrance that is easily noticeable when smelled. In contrast, those that are artificially ripened have no aroma at all.
  • Additionally, you can check the stem; if the stem is fresh and not wilted, the tomatoes are good. Ripe tomatoes usually have a stem firmly attached to the top, so when buying, you can gently pull to see if the stem detaches easily.

  • Prepare the ingredients

    Gently wash each clam with water to remove all dirt and tiny leftover shells.

    Slice the shallots thinly and then chop them finely. Wash the tomatoes, peel one and dice it, while the other two should be cut into wedges. Wash the green onions and Vietnamese coriander, then chop them into small pieces.

  • Sauté the crab and tomatoes

    You add 1 spoon of cooking oil into the pan, wait for the oil to heat up, then add the chopped tomatoes and stir evenly for about 2 minutes before transferring to a plate.

    Next, you add 2 tablespoons of cooking oil into the pan you just used, once the oil is hot, add the shallots and sauté until fragrant. Then add the crab meat and stir on high heat, while stirring, season with about 1/2 teaspoon of salt. Continue to stir the crab meat for about 5 minutes and then turn off the heat.

  • Cooking the soup

    You add about 1 tablespoon of cooking oil into the pot, then add chopped shallots to sauté until fragrant, then add the diced tomatoes and stir-fry together for about 1 minute. Next, you pour 1 liter of water into the pot, cook on high heat for about 5 minutes, then add the sautéed sour starfruit, tomatoes, and fish.

    Next, you add a little water to the fermented rice, then use a sieve to filter the water and add it to the soup. After the soup boils for about 2 – 3 minutes, you season it to taste, and finally add the Vietnamese coriander and green onions to the pot before turning off the heat.

  • Final Product
