How to choose fresh and quality beef brisket
- Beef brisket, also known as beef chest, has 3 types: rib brisket, belly brisket, and flank brisket (located towards the cow’s hindquarters).
- To buy good beef brisket, you should choose cuts that have a lot of meat and tendons, bright color, and when pressed with your hand, it should have good elasticity.
- You should avoid buying brisket that is dull in color, has an unusual smell, or feels soft and slimy when touched.
How to choose fresh beef sausage
- Good beef sausage is light brown in color, has many small holes on the surface, and the surface is smooth. When tasted, it should be moderately chewy and have a fragrant beef smell.
- If the beef sausage is too crumbly, has no aroma, and lacks holes on the surface, it means it has been mixed with flour. If it is unusually crunchy, chewy, and smooth, it may have been mixed with borax during processing.
- Preferably buy beef sausage from supermarkets or reputable food stores.

How to Make Beef Brisket Noodle

Prepare the Ingredients
Green onions and coriander should be washed clean with diluted salt water and then chopped finely.
The beef brisket should be rinsed briefly with warm water and cut into pieces about the width of one finger and about three finger lengths long. The beef sausage should be cut into bite-sized pieces.
For the accompanying vegetables, pick out any wilted parts, wash with diluted salt water, and then rinse thoroughly and drain.
Lemon grass should be washed clean, cut into pieces about two finger lengths long, and smashed. The shallots should be washed, then crushed.

Prepare the Beef Brisket
Place a pot on the stove and bring 200ml of water to a boil, then briefly boil the beef brisket in the water for about 5 – 7 minutes on high heat and discard the boiling water, rinsing the brisket again.
Next, add 1.2 liters of water to the pot and simmer the beef brisket on low heat for about 50 – 60 minutes until it is tender. While simmering, add the smashed lemon grass for added flavor.
Once the beef brisket is cooked, remove it to cool, and use a knife to slice it thinly. Keep the broth from the simmering for making the soup base.

Cooking the broth
Place a pot on the stove, heat 1 tablespoon of cooking oil to sauté the shallots, then add 1 teaspoon of annatto oil to give the broth a beautiful color.
After the shallots are fragrant, add the chopped beef paste and stir briefly, season with 1 tablespoon of salt, 1 tablespoon of seasoning powder, 2 tablespoons of fish sauce, and stir for about 1 minute. Then add all the beef simmering broth into the pot and cook over medium heat for 10 minutes.
Take a bowl containing 300ml of water, add 1 tablespoon of shrimp paste and stir to dissolve the shrimp paste, then strain it into the noodle broth. This will help the noodles have a rich flavor, true to the taste of Hue beef noodle soup.
Once the broth is boiling, reduce the heat, adjust the seasoning to taste, and then turn off the stove.

So the dish is complete, place the noodles and sliced beef in a bowl, pour the broth over and sprinkle chopped green onions and coriander on top, adding a bit of ground pepper for an irresistible fragrant aroma.
