How to choose good soybeans

  • You should choose fresh soybeans, still in their pods, with no signs of mold or sprouting.
  • Choose soybeans that are of balanced size, not too large and not too small.
  • Select beans that are off-white, with a faint pleasant smell. The beans should be firm, not crumbly or mushy.
  • Good soybeans will have a slightly dark yellow color, shiny, and plump surface.
  • Do not choose beans that have many black spots on the surface or are broken.

How to make Whole Soybean Milk

  • Prepare the soybeans

Soak the soybeans overnight to allow them to expand evenly, or you can soak them until they sprout after 8 hours.

Next, drain the soybeans in a strainer, then rinse under cold running water to clean the soybeans.

After that, transfer the soybeans to a bowl, and gently rub them with your hands to remove the skins, for about 5 minutes or until all the skins separate from the beans.

Add enough water to cover the soybeans in the bowl to help the skins float to the surface, then remove all the soybean skins.

Tip: To speed up the process, you can use a large strainer and pitcher, pour the soaking water into the pitcher through the strainer to filter out the skins, then reuse the water in the pitcher to continue rinsing the soybeans until the skins are clean.

After the beans are skin-free, rinse them under running water once more to ensure they are clean, then place them in a strainer to drain.
