How to choose fresh and delicious pumpkin

  • You should choose pumpkins that are bright green in color, with a plump skin, and small white spots on the skin.
  • A delicious pumpkin, freshly cut from the stem, will still have a bit of sap, and the skin will have a fine fuzz.
  • Do not choose pumpkins that have a light green skin turning to white, or those that are too large, as these are old pumpkins and will taste sour when eaten.
  • Those pumpkins that are withered, have soft skins, or strange black spots, are old and about to spoil, so you should avoid buying them.

How to make Stuffed Winter Melon Soup

  • Prepare the pork

    After purchasing the pork, wash it thoroughly and let it drain. Then chop the meat finely or use a meat grinder to mince it.

    Peel the shallots and garlic, then chop them finely and keep each type separate.

    Marinate the pork with 1 teaspoon of fish sauce, 1 teaspoon of seasoning, 1/2 of the chopped shallots and garlic, and 1/2 teaspoon of ground pepper. Mix well and let the meat sit for 10 – 15 minutes to absorb the seasoning.

    Tips for cleaning pork properly, without odor:

    • Method 1: Rinse the pork with water, then rub it with a little salt for 3 – 5 minutes, rinse with clean water and proceed to cook.
    • Method 2: Replace salt with lemon juice, vinegar, or alcohol and follow the same procedure as above.
    • Method 3: After rinsing off the blood, blanch the pork in boiling water for about 3 minutes, then rinse again.

  • Prepare the winter melon

    Peel the winter melon, wash away the sap, then cut it into round slices, each about the thickness of a finger.

    Using the tip of a knife or the handle of a spoon, scoop out the seeds from the winter melon, and stuff about 1 teaspoon of the marinated pork into it.

  • Cook the soup

    Put 800ml of water into a pot, bring to a boil over high heat. When the water boils, add the stuffed gourd.

    Cook for another 5 minutes until the gourd is slightly cooked, then season with a mixture of spices including: 1 tablespoon of seasoning powder, 1/2 tablespoon of salt, 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, and cook for another 5 minutes over medium heat.

    When the gourd and meat are cooked, add 1/2 tablespoon of fish sauce, stir well. Then taste and adjust to suit the family’s palate and turn off the heat.
