For whole clams:
- You should choose large clams that feel heavy, hard, thick, and have shells that are not broken. Clams that are open and do not close are dead, and you should not buy them.
- Live clams do not have a foul smell, but dead clams have a strong fishy odor. Such clams should not be purchased as they will not taste good when cooked.
For processed clams:
- You should choose processed clams with bright colors, and when you press them, they should have a certain elasticity, indicating that they are fresh.
- You should not choose processed clams that have an unpleasant smell or are leaking slimy fluid, as these are clams that have been stored for too long or have gone bad, and eating them will not be safe.
How to choose ripe pineapples
- Good ripe pineapples usually have an eye-catching yellow color, sometimes with some green spots. These are the fruits that have ripened and achieved a certain level of sweetness.
- You should choose pineapples that are slightly round and short, as these will have more flesh compared to long-shaped ones.

Prepare the clams
After buying, you wash the clams with water. Next, to allow the clams to expel all the dirt, soak them in rice water for 15 minutes, then take the clams out and let them drain.
Put the clams into a pot and add enough water to cover them, then place the pot on the stove. Boil the clams over low heat; when the clam water starts to boil, stir the clams in the pot for about 1 – 2 minutes, and turn off the stove when all the clams have opened.
Tip: When boiling clams, they release a lot of bubbles that can easily overflow, so boil them in a large pot and over low heat.Place a clean strainer over a bowl, then pour the boiled clams through the strainer to separate the liquid from the clams.
Let the clam water sit in one place to allow the sediment to settle. For the clams, remove the shells to take the meat, then rinse with water and let drain.

Wash the tomatoes and cut them into wedges. Soak the bean sprouts in diluted salt water for about 10 minutes, then rinse and drain.
Peel the pineapple, remove the eyes, rinse it with water, and cut it into bite-sized pieces.
Remove the roots and any damaged leaves from the cilantro, then rinse briefly with water and chop it finely.

Cook the clam soup with pineapple
Place a pot on the stove and add 1 spoon of cooking oil, wait for the oil to heat up, then add chopped shallots to sauté until fragrant, then add tomatoes and stir-fry for 2 minutes over medium heat.
Next, slowly pour the clam broth into the pot to discard the sediment at the bottom of the bowl. Season the pot with 2 tablespoons of salt, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 2 tablespoons of tamarind juice, and boil the soup over high heat.
