How to choose fresh and delicious duck breast

  • To buy fresh and delicious duck breast, you should purchase ducks that have just been slaughtered. The outer skin should have a yellow color that is not too dark, especially without spots or bruises.
  • Good duck breast will have bright-colored meat; when you press it, you will feel its firmness and it will have a distinctive smell.
  • You should absolutely not buy breasts that are soft, mushy, or have unusual spots on the skin, meat, or a strange smell. These are usually ducks that are sick or have been injected with water.

How to prepare Stir-fried Duck with Lemongrass and Chili

  • Prepare the ingredients

    After purchasing the duck breast, rub a bit of salt on it, then rinse with water until clean, and cut into thin slices about 1/2 finger thick.

    Peel off the outer layers of the lemongrass, and peel and wash the garlic and shallots. Next, add the lemongrass, garlic, shallots, and chili into the blender, and blend the ingredients at a high speed for 2 minutes.

  • Marinate duck meat

    First, you place a non-stick pan on the gas stove, then heat the pan with 1 tablespoon of cooking oil.

    Once the oil is hot, add all the minced lemongrass, garlic, chili, and shallots to sauté for about 2 minutes over medium heat until the mixture is golden, crispy, and fragrant, then turn off the heat.

    Next, marinate the meat with the sautéed mixture along with 1 tablespoon of fish sauce. To make the duck meat softer and absorb the seasoning better, after mixing evenly, place the duck meat in the refrigerator refrigerator for about 1 hour.
