How to prepare Pig Trotter Noodles

Prepare pig trotters
After purchasing the pig trotters, scrape off the hair, remove the outer layer, then chop into small pieces, wash thoroughly and blanch in boiling water for about 5 minutes. Next, remove the trotters, wash them again for cleanliness, and let them drain.
How to clean pig trotters and eliminate odor:- To clean the pig trotters thoroughly and remove the odor, use salt and lemon to rub on the cleaned trotters and then rinse with water.
- You can also use alcohol or ginger to rub or soak the trotters for about 5 – 10 minutes and then wash them again with water.

Prepare other ingredients
After purchasing dried squid, roast both sides for about 3 minutes, then soak in boiling water for about 5 minutes. After 5 minutes, remove the dried squid and let it drain, then tear it into small pieces.
For the white radish, peel off the skin, cut off the ends, wash thoroughly, and let it drain, then cut into bite-sized pieces.
Peel the garlic and shallots, wash them, let them drain, and then mince them finely.
Bean sprouts, scallions, cilantro, and celery should be washed clean and drained.

Cook the broth
You use a pressure cooker to cook the broth, adding pork knuckle, shredded squid, white radish, and Vietnamese noodles into the pot, then add 3 liters of water and simmer for 25 minutes.
After the broth is done cooking, pour the water into another pot, place the broth pot on the stove, season with 5 teaspoons of sugar, 5 teaspoons of seasoning powder, and 1 teaspoon of monosodium glutamate, and cook until the broth boils again. You can adjust the seasoning to taste and then add pepper before turning off the heat!

Fried garlic and blanched noodle
Put a pan on the stove, heat 1/2 cup of cooking oil, when the oil is hot, add the onion and garlic to fry until golden. Once the onion and garlic are golden, remove them from the pan.
For the chewy noodles, boil them in hot water for about 10 minutes, then take them out and rinse with cold water. Next, use the oil from frying the onion and garlic to mix with the noodles. Mix well to keep the noodles fluffy and not sticky together.
