How to choose fresh ingredients
How to choose fresh sweet potatoes
- Choose sweet potatoes that are round or elongated, without any waist, and when pressed, they should not be too hard; these tubers usually have less fiber, are starchy, and taste very sweet.
- It is advisable to select sweet potatoes that have a smooth exterior, without cracks or breaks. They should feel firm in hand, heavy, and not bruised.
- Avoid choosing tubers with black spots or that are rotten, as these are signs that the sweet potatoes have gone bad. Do not choose those that are too small, have waists, or are dented, as such tubers often contain more fiber and will not taste good when eaten.
How to choose good mung beans
- For this sweet potato and mung bean porridge, you can choose to buy either whole mung beans or peeled mung beans depending on your preference!
- It is advisable to select beans that are smooth, round, bright green, and have a natural fragrant smell.
- Do not buy beans that are shriveled or misshapen, as these are usually eaten by pests or are still immature.
- Avoid choosing beans that have different colors, musty smells, or chemical odors. Stay away from beans that show signs of pest infestation.
How to make Sweet Potato and Mung Bean Porridge
-
Soak the beans and cook until soft
Wash 150g of mung beans and soak them for about 2 hours to soften. Then rinse 2-3 times until the water is clear, then drain.
Place a pot on the stove over medium heat, add the mung beans into the pot along with 1/2 teaspoon of salt, and 2 liters of water to boil. Then reduce the heat and cook for about 30 minutes until the mung beans are soft.
-
Prepare the sweet potatoes
After purchasing, peel the sweet potatoes. To prevent them from turning black, soak them in salt water while peeling.
Then rinse them thoroughly with water and use a knife to cut the sweet potatoes into bite-sized pieces, about the size of a finger.
-
Cook the porridge
At this point, the mung beans are soft. Add the sweet potatoes to boil. If you notice there is little water, you can add more water until it reaches just above the sweet potatoes.
Cook for another 20 minutes on low heat until the sweet potatoes are soft, then use a ladle to mash the sweet potatoes. They are already sweet, but if you prefer it sweeter, you can add more sugar to taste. Turn off the heat, and you’re done.
-
Final Product
Sweet potato and mung bean porridge when completed has a natural yellow color from the sweet potato that is very eye-catching, and the mung beans swell and become soft.
The sweet potato is soft and blends with the porridge; when enjoying it, you will feel the creamy taste, the natural sweetness, and a light aroma that is very delicious.
