Prepare Ingredients
Put 1/2 cup of rice into a bowl, add water to cover the rice, and soak for about 15 minutes. Then rinse the rice with water twice and drain.
Wash the pork ribs clean, then blanch them briefly in boiling water to remove any unpleasant odor. Peel the purple sweet potato with a knife, rinse it clean with water, and then dice it.
For the enoki mushrooms, remove the outer skin, cut off the stems, then soak them in diluted saltwater for 5 – 7 minutes. Rinse the enoki mushrooms with clean water and slice them thinly lengthwise.
Peel the shallots and green onions, wash them thoroughly, and drain. Slice the shallots thinly and chop the green onions, then put them into 2 bowls.
Effective Ways to Remove the Smell of Pork Ribs- Method 1: To remove the smell from pork ribs, you can use coarse salt diluted with water and soak the ribs for about 5 minutes, then rinse thoroughly with water and drain before cooking.

Cook the porridge
Prepare a pot for cooking porridge, place the pot on the stove and turn the heat to medium, add the sliced shallots and 1/2 tablespoon of oil to sauté the shallots until fragrant. Then add the pork ribs and stir for about 2 minutes before adding the rinsed rice to the pot.
Season the porridge with 2 teaspoons of seasoning powder, 1/2 tablespoon of salt, and stir until the seasoning is dissolved. Then add about 1 liter of water to the pot and cook until the porridge boils, then add the diced purple sweet potato.
Continue to cook the porridge on the stove for about 20 – 30 minutes over medium heat until the rice expands. Every 5 – 7 minutes, use a ladle to stir the porridge to prevent it from burning at the bottom.
Tip: When the porridge boils, you should regularly skim off the foam that rises to make the porridge clearer and more appealing. -
Sautéed Mushrooms
During the time you cook the porridge, you sauté the mushrooms. Place a pan on the stove, add 1/2 tablespoon of cooking oil, wait until the oil is hot, then add the prepared mushrooms and stir on medium heat for about 5 – 7 minutes until the mushrooms are cooked.
Add 1 teaspoon of seasoning and 1 teaspoon of oyster sauce to the mushrooms and continue stirring on the stove for about 1 minute until all the seasoning is dissolved, then turn off the heat.

Add the sautéed mushrooms to the pot of porridge, use a ladle to stir evenly and adjust the seasoning to taste. Scoop the porridge into a bowl, sprinkle with some chopped green onions and ground pepper on top to enhance the aroma, and it’s done.

Sweet potato porridge has a natural purple color from the sweet potato, the porridge grains are soft, the pork ribs are tender, and the mushrooms are sweet and still retain their crispness.
