  • When buying clams, first choose those that are large, feel heavy, have a solid and thick shell, and are not broken.
  • Live clams will tightly close their shells and are very difficult to open by hand. If you see a clam with its shell slightly open, try touching it; if it closes, it is still alive.
  • Clams that are small and feel light will have less meat inside and won’t taste good.
  • Additionally, if you see a clam with its shell open and it does not close when touched, it is dead and should not be purchased.
  • Moreover, when buying, you should smell them; live clams will have no smell, while dead clams have a very unpleasant, fishy odor.

  • Good tomatoes have firm, plump, glossy skin, bright red, uniform color, and when you press on the tomato, it feels a certain firmness.
  • When you cut a tomato in half, if the seeds inside are yellow and the flesh is bright red, it indicates that the tomato is ripe and delicious.
  • You should choose tomatoes that still have fresh green stems firmly attached to the fruit; these are fresh, newly harvested tomatoes.

  • Prepare the ingredients

    Wash the clams in two changes of water. To help the clams expel dirt, soak them in a bowl of diluted salt water for about 2 hours. After that, remove the clams, rinse them again, then drain in a colander.

    Simple tips for cleaning clams
    • Method 1: Soak the clams in diluted salt water with a few slices of chili for about 2 – 3 hours, and the clams will expel sand and dirt.
    • Method 2: After soaking the clams for about 2 hours in diluted salt water, boil a pot of water with a little white vinegar, add the clams while stirring to help them expel all dirt.

    Tomatoes are washed and cut into wedges.

    Pineapple is peeled, eyes removed, and cut into small bite-sized pieces.

    Celery is washed, cut into pieces about 2 finger lengths long.

    Shallots are peeled, washed, and sliced thinly.

    Put clams into pot, add 100ml of water, then place it on the stove, turn on medium heat, and boil until the clams open their mouths, then turn off the stove.

    Remove the clams, wait for them to cool a bit, then separate the clam meat into a bowl and set it aside.

    Prepare a sieve and place a clean cloth on top, then put the sieve over a bowl and pour the clam broth through the sieve to filter out the residue.

  • Cook the soup

    Place a pot on the stove, heat the pot, then add 1 tablespoon of cooking oil and minced shallots. Sauté the shallots until fragrant, then add the clam meat and stir-fry until cooked.

    Next, add 700ml of water and the clam broth, bring to a boil, then add tomatoes and pineapple, season with 1 tablespoon of seasoning powder, 1 teaspoon of sugar, and 1/2 teaspoon of monosodium glutamate, stir well.

    Continue to cook until the soup boils again, the tomatoes and pineapple are soft, taste and adjust seasoning as needed, finally add celery, stir well, and turn off the stove when the soup is just boiling.
