  • It is advisable to prioritize buying fresh pork hocks, as this will make the meat tastier. Fresh pork hocks are those that still have the original hooves; after purchasing, you can ask the seller to chop them into smaller pieces.
  • If buying pre-sliced pork hocks, you should choose pieces that are firm, with even meat fibers, a dry cutting surface, bright pink meat, and when pressed, the meat has high elasticity.
  • Do not buy hocks that have a foul smell, are fishy, have changed color from bright red or pink, or have strange spots on the meat, as this indicates that the hocks are no longer fresh.

How to choose fresh pumpkins

  • Choose pumpkins with the leaf stem about 2 finger joints long; these pumpkins will generally be able to be stored longer after purchase.
  • Choose pumpkins that feel heavy in your hand, firm, and not soft or wilted.
  • Do not buy pumpkins that show signs of bruising, rotting, or even leaking slimy fluid, as these are spoiled pumpkins.

How to prepare Stewed Pork Leg with Pumpkin

  • Prepare and marinate the pork leg

    Wash the pork leg with diluted salt water, then to eliminate the smell, put the pork leg in a pot with 1 liter of water, 1 sliced ginger root, and boil until the water boils for about 1 minute, then remove the pork leg and wash it clean.

    How to clean the pork leg without odor:

    • You can ask the seller to chop the leg beforehand for convenience in preparation. Chop into slices about 2 finger joints thick.
    • When bringing the leg home, use 1 – 2 teaspoons of salt or lemon juice (vinegar, alcohol) to rub over the surface of the pork leg, let it sit for about 2 – 3 minutes, then rinse with cold water.
    • Or you can briefly boil the pork leg with 1 shallot after washing it clean, which can also effectively eliminate the smell of the pork leg.

    Marinate the pork leg with minced shallots, 1 teaspoon of seasoning, 1 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate. Let it sit for about 30 minutes for the pork leg to absorb the spices.

    Place a pot on the stove, add 1/2 tablespoon of cooking oil and the marinated pork leg, stir-fry for about 2 minutes until the pork leg is browned.

    Next, add about 1.5 liters of water to the pot and bring to a boil. When the water is boiling, skim off the foam, reduce to low heat, add 1 teaspoon of salt, 1 tablespoon of seasoning, then cover and braise the pork leg for 30 minutes.

    Then, add 500ml of water along with the pumpkin to the pot and 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, and braise for another 10 minutes.

    Finally, when the pork leg and pumpkin are cooked, taste and adjust the seasoning, then ladle the soup into a bowl. Sprinkle some chopped green onions and ground pepper on top for added flavor, and it is ready to enjoy.
