- To choose good crabs, press on the crab’s belly; if it feels firm and bounces back lightly, it’s fresh.
- Preferably select crabs that are bright green, have a solid surface, are of manageable size, and feel hard and firm when held.
- Avoid buying crabs with a deflated belly that sinks when pressed, as these crabs have less meat.
- Also, limit choosing crabs with broken or loose claws that are not firmly attached to the body, as they may be spoiled and not fresh anymore.
How to choose fresh and delicious water spinach
- Fresh and delicious water spinach usually has a bright green color, the tips are still fresh, and when bent, it makes a crispy sound “crack”.

Prepare the crab

Next, add 150ml of bone broth and cook for about 5 – 7 minutes, then season with 1/2 teaspoon of sugar, 1 tablespoon of monosodium glutamate, 1/2 tablespoon of seasoning powder, 1 teaspoon of fish sauce, and 1 teaspoon of satay, stirring well to dissolve the seasonings.
Then, add the remaining 150ml of bone broth and cook on medium-high heat until the hotpot broth comes to a boil. At this point, you can taste and adjust the seasoning to suit your family’s preferences!

Boil crab and water spinach
After boiling the broth, add all the crabs in, stir briefly, cover, and cook for 10 – 15 minutes, until the crab shells turn light orange, then carefully remove the crabs into a pot.
Next, add 1 teaspoon of minced ginger into the hot pot broth and toss in the water spinach, boil briefly for about 3 – 5 minutes, then carefully transfer it into the pot containing the crabs.

Finally, pour all the hot pot broth into the pot with crab and water spinach and bring it back to a boil to complete, ready to enjoy right away.
