How to Choose Fresh Clams
- You should choose clams that have bright shells and are intact.
- Choose those that are still closed because they are alive, contain a lot of nutrients, and will taste sweeter when cooked.
- Avoid clams with broken shells or those that have a lot of algae on the surface.
How to Choose Fresh Knotweed
- Choose knotweed that is bright green, with leaves that are intact and not bruised.
- Preferably choose bundles where the leaves are still tightly attached to the stems, as this usually indicates freshness, high nutrient content, and longer shelf life.
- Avoid bundles with wilted, yellowing, bruised, or heavily curled leaves due to pests.
How to choose fresh and delicious tomatoes
- You should choose tomatoes that are bright red and have a smooth surface.
- Choose tomatoes with fresh green stems that are firmly attached to the fruit.
- Avoid tomatoes that are bruised, have scratched surfaces, or have many unusual black spots.
How to make Clam soup with spinach

Prepare and boil the clams
After buying the clams, wash them thoroughly and soak them in rice water for about 8 hours. After 8 hours, wash them again with water, then remove and place them in a pot to boil.
Put the pot with the clams on the stove, add about 1 teaspoon of salt, pour in about 400ml of water, and boil the clams for about 20 minutes.

Prepare other ingredients
Carefully strip the fresh green leaves of the water spinach, and place them in a basket. Then wash thoroughly with cold water.
Remove the yellowed leaves and roots from the green onions, wash them clean, and cut the green onion tops separately. Combine the leaves with the chopped Vietnamese coriander, while slicing the green onion tops thinly.
Cut off the tops of the tomatoes, wash them clean with water, and then cut them into wedges.

Extracting clam meat
After about 20 minutes of boiling the clams, they should be cooked. Carefully remove the clams from the pot and drain them, then separate the shells to get the clam meat into a bowl.
Once you have extracted the clam meat, wash it thoroughly with water again, cut the belly to remove any impurities inside, wash it with water and then place it in a strainer to drain!
After the clams have drained, use scissors to cut the clams into small bite-sized pieces, marinate them with 1 teaspoon of seasoning powder, 1 teaspoon of seasoning, and 1/2 teaspoon of ground pepper, mix well, and let it marinate for about 10 minutes.

Cooking the soup
Place a pot on the stove, add about 2 tablespoons of cooking oil, wait for the oil to heat up, then add the green onion and sauté until golden.
Once the onion is golden and fragrant, add the clams and stir-fry for about 2 minutes, then add the tomatoes, stir well for another 5 minutes, and then pour in 1 tablespoon of bean paste, add the vegetable, green onion, and Vietnamese coriander, and stir-fry for 4 minutes.
After 4 minutes, pour the clam boiling water into the pot, making sure to leave behind the sediment as it often contains sand and impurities.
Cook until the soup boils, taste and adjust the seasoning as needed, then turn off the heat.
