  • To choose fresh clams, you should select those that are still alive, while observing that the shell is intact, with a slightly dark color, not too bright.
  • When you gently touch the clam, a live clam will slowly close its shell; conversely, if there is no movement, that means the clam is dead, and it will not taste good.
  • Avoid buying those that are dead, have a strong fishy smell, or have shells that are too damaged or crushed.

How to choose fresh tofu

  • Fresh tofu will have an off-white color; if you see tofu that is too yellow, it means it contains a lot of gypsum, which is not good for health.
  • At the same time, when you hold it, it should feel light, soft, smooth, elastic, and not easily broken. When smelling it, you should detect the characteristic aroma of tofu; conversely, if it smells pungent and unpleasant, you should not buy it.

  • You should choose tomatoes that are red, round, look plump, and have thin, shiny skin.
  • In addition, when buying, you should also observe the stem; if the tomato still has a green stem firmly attached to it, that is a sign that the tomato has just been harvested, which means it will taste fresher.
  • Avoid choosing tomatoes that are overly ripe, bruised, unevenly colored, and feel mushy with no elasticity when touched, as these are usually ones that are not ripe enough or have wilted from being stored too long.

How to make Clam Soup with Tofu

  • Prepare and boil the clams

    First, after purchasing the clams, use a brush to scrub off all the dirt sticking to the outside of the shell. Then, take a pot and add 1.5kg of freshly prepared clams along with 200ml of water, and put it on the stove to boil over medium heat for about 10 – 15 minutes.

    When the clams are cooked, turn off the heat and let them cool for 5 minutes. Next, proceed to separate the shells, take the clam meat inside and rinse it directly under running water to remove any remaining sand, then let it drain and cut it into bite-sized pieces.

    • You can soak the clams in rice water with a few slices of ginger and chili to help them release the sand quickly.
    • Soak the clams in diluted salt water with a few chili peppers. The salty and spicy mixture will help the clams release the sand.
    • Additionally, you can also use a mixture of vinegar and chili to soak the clams, which is also very effective.

  • Prepare other ingredients

    For the tomatoes, remove the stem, wash thoroughly, and cut into wedges. As for the tofu, simply use a knife to cut it into bite-sized pieces.

    Finally, for the rice paddy herbs, pluck off the young leaves by hand, then wash them along with the green onions, which have had their roots removed, drain, and chop finely.

  • Sauté Clams

    Place a pan on the stove with 2 teaspoons of minced garlic and 2 tablespoons of cooking oil, and sauté until fragrant over medium heat. Next, add all the chopped clams and stir-fry evenly for about 3 minutes.

    Then, add 1/3 tablespoon of oyster sauce, 1/2 tablespoon of fish sauce, and 1/2 tablespoon of chili sauce, and continue to stir for another 3 minutes to let the clams absorb the seasoning. Finally, add 50g of Vietnamese coriander and 3 chopped green onions, stir well again, and then turn off the heat.

    Tip: Avoid overcooking the clams as they have already been boiled, so you don’t need to sauté them for too long!

  • Make the Soup

    Take a pot and place it on the stove with 1 teaspoon of minced garlic and 1 tablespoon of cooking oil, and sauté until fragrant over medium heat.

    Next, add 3 tomatoes cut into wedges, 2 tablespoons of fish sauce, and 1/2 teaspoon of seasoning powder, and sauté briefly until the tomatoes soften for about 3 – 5 minutes.

    Then, add 1 liter of water and cook for 10 – 15 minutes. Once the water boils, add all the sautéed clams along with 2 pieces of tofu, cook for another 5 – 7 minutes, then season to taste and serve in a bowl!

    Tip:
    • You can use the clam cooking water to make the soup sweeter.
    • To avoid breaking the tofu, do not stir too vigorously when adding the tofu.
